Christmas is in less than one month and Sonia cooks a side dish which goes well with any dish on your holiday table: the sweet and sour onions!

Welcome to the GialloZafferano kitchen, I am Sonia. Today we'll be preparing together a very easy and tasty side dish: the sweet & sour onions.
Let's see what ingredients we'll need:
• 1 lb (500 g) of peeled small onions
• 4 tbsp (50 ml) of balsamic vinegar
• 7 tsp (30 g) of sugar • 2 tbsp (30 g) of butter
• salt
Well, let's go make our sweet & sour onions:
Melt the butter in a saucepan. Now add the sugar, and cook until slightly golden brown.
As you can see, the bottom of our saucepan is turning light brown. So, add the balsamic vinegar.
Stir and let it evaporate a bit ... after that, we'll add the onions.
Now that the balsamic vinegar has reduced a bit, add the onions.
Stir... then let it simmer with a lid on. In all, the onions should take at least 40 minutes to cook on a low flame. After half the cooking time, check if you need to add some hot water or vegetable broth.

After about 20-25 minutes, as you can see, the onions have dried out a bit and the liquid has thickened, so you need to add a ladle of hot water or vegetable broth, as you prefer. Then let them simmer uncovered, until the onions are cooked. The cooking time depends on the size of the onions, so remember to check them.
A few minutes before removing the onions from the heat, add some salt. As you can see, they should look quite dry.
At this point, put them in a dish... and serve together with roast meat or fish.

2 Tbsp sugar
2 Tbsp vinegar - Baoning or Zhenjiang
150ml stock or water
1 tsp soy sauce
3 Tbsp neutral oil
2 Tbsp chili bean paste
1 Tbsp minced garlic
1,5 Tbsp minced ginger
2 Tbsp minced scallions
1/4 tsp toasted sesame oil (optional)
3/4 tsp potato starch, dissolved in about 1/2 Tbsp water
fresh minced scallions for garnish

30ml Ming River Baijiu
30ml Red Vermouth (Martini Rosso)
200ml tonic water
1 lemon or orange rind, squeezed (optional)

Sweet and Sour Flowering Red Onions

Ingredients
6 medium red onions, peeled
Kosher salt and freshly ground black pepper
2 tablespoons red wine vinegar
1 tablespoon dark brown sugar
1/4 cup extra-virgin olive oil
Directions
Preheat the oven to 425 degrees F.
Slice 1/4 inch off the tops and bottoms of the onions so they sit flat. Put the onions on the cutting board root-end down. Cut 3 slits in the stem side of each onion, crisscrossing to make 6 pie slices, cutting about two-thirds of the way through (do not cut all the way through).
Bring a medium pot of salted water to a boil. Drop the onions in and cook until tender on the outside, 4 to 5 minutes. Remove and cool. When the onions are cool enough to touch, gently open the onion petals so the onion opens up like a flower.
In a small pot, simmer the vinegar and brown sugar with 2 tablespoons water over medium heat until syrupy, 2 to 3 minutes.
On a baking sheet fitted with parchment paper, arrange the onion flowers in a single layer with space between each. Drizzle with the olive oil and season with salt and pepper. Roast until the flowers open and the tips of the petals are lightly brown, 40 to 45 minutes.
Plate the onions on a platter and spoon the sauce over the onion flowers. Serve.
Cook’s Note
I love when a vegetable can indicate the season. These onions are so beautiful and tasty. You can make these in advance, then just warm and serve. You can also make them with yellow onions, although the sweetness of the red onions is my favorite for this recipe. They are stunning next to grilled steaks or fish. They can also add great flair to a vegetable platter.

It’s so easy to make Sweet Chili Sauce | MyHealthyDish
Sweet & sour onions Italian style - An appetizing side dishperfect together with meat dishes
Recipe:
400 gr. raw little onions ready to use
20-25 gr. butter
15 gr. flour
15 gr. white or brown sugar
2 tablespoon of white viengar
Put the butter in a pan and gently melt,
add the little onions and mix with butter.
Sprinkle one tablespoon of flour.
Make a little brown cooking for 2 minutes.
Then add some water and cover the pan
to stew the onion.
Add salt and then add sugar.
When the cooking time of onions
is almost finished (around 8-10 mins)
add the last ingredient, the vinegar.
Let reduce 1 minute.
Ready! Pour in a serving dish.

How to cook Sweet and Sour Meatballs | Sweet and Sour sauce
Sweet and Sour Meatballs
Ingredients:
1/4 kg ground beef
1/2 cup grated carrots or minced carrots
1/2 cup spring onions
1 tbsp garlic, minced
1/4 cup breadcrumbs
1/2 tsp sugar
salt and pepper to taste
1 tsbp sesame oil (optional)
For the binder:
1 tsp accord powder
1 1/2 tbsp cornstarch
Sweet and Sour sauce ingredients:
1/4 cup carrots, julienned
1 thumb sized ginger, julienned
1 medium sized, sliced
2-3 cloves garlic, crushed
1 small sized red bell pepper, julienned
100 grams tomato sauce
1/4 cup native vinegar or white vinegar
1 tbsp sugar (more if needed)
salt and pepper to taste
1/3 cup water (more if needed)
cooking oil for frying
Procedure:
1) mix the salt, pepper, sugar and garlic
2) mix well with clean hands. mix until the meat absorb the flavors
3) add onions and carrots then mix
4) add breadcrumbs and mix (breadcrumbs serves as an extender. But if you do not like you can add more vegetables
5) add accord powder and cornstarch.
6) add sesame oil and mix well
tip: to check if the mixture is well seasoned. Just fry 1 tbsp of the mixture.
7) Time to roll the meat. Using your hands make a ping pong ball or a golf ball sized portions
8) pre heat oil and cook meatballs over low heat until golden brown
9) drain excess oil
How to cook the sweet and sour sauce:
1) In a pan combine all the ingredients and mix just until combined
2) cook over low heat and bring to a simmer
3) cook for another 5 minutes or until the sauce is slightly thick and the flavor of the spices are release
4) turn the heat off and add the meatballs
5) coat the meatballs evenly with the sauce
6) best served with rice
You can also mix your meatballs with your spaghetti sauce or make a meatball in gravy sauce. You can also use this sweet and sour recipe to make a Sweet and Sour Pork or Fish.
Or you can simply fry it and serve it with ketchup.
In this recipe I used accord powder for our binder. Because the longganisa maker is also using this to make their longganisa for business. But if you do not like using accord powder or if it is not available and you are only making it for your own consumption you can just use egg.
Accord powder is not only for binding but it also retains the color, flavor and moisture of the meat. It also serves as preservative.
You can also add other seasoning like msg or herbs if you like.
