1 lb Velveta Process Cheese
- Spread, Cubed 1/2 c Pace Picante Sauce
Combine ingredients in saucepan. Cook over low heat, stirring frequently, just until sauce is smooth. Serve with corn chips, tortilla chips or vegetable dippers. Makes 2-1/2 cups. Microwave Directions: Combine ingredients in 1-quart microwave safe bowl. Cook at high for 3 to 4 minutes or until cheese spread is melted, stirring after each 1-1/2 minutes. From: Pace booklet.

Chef Simply is in the house, and on this fine day we are creating a delicious Queso dip. Using the Queso recipe from here:

THE ULTIMATE CHEESE DIP RECIPE:
2.5 cups / 225 g Cheddar cheese, freshly shredded
1 tbsp cornflour / cornstarch
1/2 tbsp / 8 g butter
1 large garlic clove, minced
1/4 small white onion, very finely chopped (1/4 cup)
375 g / 13 oz evaporated milk (1 can, not low fat)
1 small tomato, finely diced (3/4 cup)
1/4 tsp each onion powder, garlic powder, cumin, cayenne pepper, chili powder
4 oz / 113g can chopped green chile, fire roasted
1/4 cup coriander / cilantro, finely chopped
2 - 3 tbsp milk, any
Salt
REMEMBER: Coat cheese in cornflour/cornstarch before putting in pot to melt, otherwise you will have a very sad Cheese dip.
- Melt butter in pot then cook garlic/onion.
- Add the tomatoes + juice and cook until tomatoes are softened
- Add evaporated milk + cheddar cheese, stir until all cheese is melted then add peppers then spices.
- Use milk to adjust consistency, while its on the heat it will be more melted than if it were off, so keep that in mind.
- Store in refridgerator, reheat in microwave.
There you have it! My personal favorite queso dip. Once made, you will have enough cheese dip to last for at least a week unless you're like me and you just fat boy flex on the whole queso and eat it all in a day because its that good.

Here is how I make this classic recipe. Be sure to buy 2 can of rotel or the dip will be too thick. Enjoy!
RECIPE:
INGREDIENTS:
1 lb. ground beef
16 oz. Velveeta cheese this is the smaller box
20 oz. Rotel® diced Tomatoes with & Green Chiles (TWO 10-oz. cans) DO NOT DRAIN
2 tsp. chili powder
¼ tsp. garlic powder
SLOW COOKER SIZE:
4-quart or larger
INSTRUCTIONS:
Set a large skillet over medium high heat on the stove top. Brown and crumble the ground beef, drain the fat.
Add the cooked ground beef to the slow cooker, cube the velveeta and add on top of the beef.
Pour over the can of rotel and sprinkle over the chili and garlic powder. Stir.
Place the lid on the slow cooker. Cook on HIGH for 2 hours or until cheese is melted and the dip is hot.
Keep on warm while serving.
