How To make Party Nibbles: Spanakopita Crackers
1 tb Butter
1/2 c Shallots, finely chopped
- or onions 1 lb Frozen chopped spinach
-thawed 1 pn Nutmeg
1 pn Cayenne pepper
1 pn Pepper
1 c Firm goat cheese, crumbled
Salt 8 Phyllo pastry sheets
1/4 c Butter, melted
These spinach and cheese filled crackers can be made ahead, ready to pop into the oven at show time. For an even more artistic presentation, tie up with chives. The phyllo dough can be cut on the diagonal and the edges ruffled up. In non-stick skillet, melt butter; cook shallots over medium-low heat, stirring often, for 5 minutes or until softened. Press out excess liquid from spinach and chop finely. Add to skillet; cook, stirring, over medium heat just until moistened. Stir in nutmet, cayenne pepper and pepper. Transfer to bowl; let cool. Mix in cheese; season with salt to taste. Press mixture into tiny log shapes. Place 1 sheet of phyllo pastry on work surface, keeping remaining sheets covered with a damp cloth. Brush 1 half of pastry from 1 short end to centre with butter. Fold over, aligning short ends. Cut pastry in half crosswise to make 2 pieces. About 1/2-inch in from long edges on each piece of pastry, place 2 log-shaped
mounds of filling. Roll up each piece loosely from short edge to enclose mounds completely. Cut pastry between the 2 mounds to separate into 2. With fingertips, gently press pastry together at each end of mount to form Christmas cracker shape [ed: Christmas crackers are those amusement items that are formed from a hollow tube, stuffed with a party hat and "Cracker-Jack" type prize. They produce a loud snapping sound when two people pull on either end). Repeat with remaining filling and pastry. (Can be refrigerated, separated by waxed paper in layers, in covered container for up to 3 days.) Place on nonstick or lightly greased baking sheet, about 1 inch apart. Brush with butter. 2 sheets of puff pastry
2.5 oz of fresh spinach
1 large handful of parsley
2 cloves of garlic
7 oz of cream cheese
11.1 oz of feta cheese
Salt and pepper
2 handfuls of almonds
1 lightly beaten egg
350 degrees F convection for about 14 minutes.

Ingredients for this recipe
Spinach - 100 gms
Feta Cheese - 50 gms
Puff pastry - 1 sheet
Garlic - 2 pods (grated)
Chopped Onions - 1 (medium size)
Cumin powder - 1 tspn
Pepper powder - 1 tspn
Salt - to taste
Milk - 2 tbspn
Sesame seeds - 2 tbspn

Step 1: Heat a pan and add little bit of oil
Step 2: Once the oil gets heated add two pods of garlic grated and 1 medium sized onions chopped and saute them well
Step 3: Add a pinch of salt and crush few peppercorns and cumin seeds and gently combine them together
Step 4: Now add roughly chopped spinach to it and give it a quick mix
Step 5: Once the spinach gets cooked soft add feta cheese and mix it well

Now the Spinach and feta cheese stuffing is ready,
Keep it aside

Step 6: Preheat the oven for 10 mins in 200° C
Step 7: Divide the pastry sheets into half and place the stuffing in the lower part of the sheet to the Centre
Step 8: once it is done seal the ends by brushing it with water or milk
Step 9: Press all the edges so that the sheets doesn’t opens while baking
Step 10: Brush the top of the sheet with milk and sprinkle few sesame seeds on to the top of it

Bake the stuffed pastry sheet until it turns to golden brown color for about 15 to 20 minutes in 200° C

Spinach & Cheese Pies - The best easy recipe for spanakopita inspired individual puff pastry pies!
Spinach just goes so well with cheese! And this beautiful combination of salty feta, gooey and melty mozzarella, creamy ricotta, mixed up all together with spices and dill, wrapped up in crispy, flaky puff pastry... takes the prize!
This is recipe is inspired by one of my favorite Greek dishes called Spanakopita. Although this is not spanakopita, but the taste and texture will remind you of it! Try out this delicious and easy recipe, it takes only minutes to prepare. These are freezer friendly too, and can be frozen raw, and baked directly from the freezer. The only difference is that the baking time would be 40-45 minutes if baked frozen.

Spinach & Cheese Pies - Ingredients:
10 oz frozen chopped spinach.
1 small onion, finely chopped
3/4 cup feta cheese crumbles
1/4 cup mozarella cheese
1/2 cup ricotta cheese
1 egg for filling 1 egg for brushing on top
1 tsp black pepper
2 tsp red chili flakes
1 tsp garlic powder
1 tbsp dried dill (or 1/4 cup of fresh dill, chopped)
Salt to taste (optional - keep in mind feta cheese is already quite salty)
1 puff pastry sheet (I used @pepperidgefarm1003 frozen puff pastry sheet, and its approximately 9.75” X 10.5” X 3/16” in dimension)
Whisked egg for egg wash (brushing on top of each pie)
Everything bagel seasoning, or sesame seeds/poppy seeds (optional)
Preheat oven to 400 degree.
Thaw spinach and squeeze excess water out. Add onion and the 3 cheeses, 1 egg, spices and dill. Now mix all of this really well and set aside. Roll out puff pastry sheet a little, don't flatten it out too much. Now cut into 9 squares, and don't worry if they are perfectly even.
Add a very generously heaped tablespoon of filling into each square. Gently roll them up to seal ends. Place these on a parchment lined baking sheet. Brush each one with some egg wash. Sprinkle some everything bagel seasoning on top or you can use sesame seeds, or poppy seeds, or just completely leave these out. Just the egg wash alone is fine too.
Bake for 20 minutes at 400, or until golden brown and cooked through! Serve hot or warm for best taste, but they are good even at room temperature.
Tip: if you have any leftover filling, you can use it in your omelette, or make quiche, or even add some shredded chicken to it and make samosas/empanadas.
