How To make Pasta with White Clam Sauce
2 tb Olive oil
3 md Garlic cloves, chopped fine
1 c Rich fish stock, salt-free
1 c Dry white wine
36 sm Fresh clams, such as
-Littlenecks or Manilas, in -the shell, thoroughly -cleansed 1/4 c Fresh Italian parsley,
-finely chopped Freshly ground black pepper Cooked pasta such as -linguine or spaghetti In a large saucepan, heat the oil with the garlic over moderate heat. When the garlic sizzles, add the fish stock and wine. As soon as the liquid comes to a boil, add the clams and cover the pan. Steam the clams until all of them have opened, 3 to 5 minutes; discard any unopened clams. With a slotted spoon, remove them from the pan and place them, shells and all, on top of cooked pasta. Stir the parsley into the liquid and spoon the liquid over the clams and pasta. Season to taste with black pepper.

Today we are preparing White Clam Sauce with Linguini! Fresh clams are a must for this White Clam Sauce recipe. This is a simple recipe using only a few fresh ingredients, such as Extra Virgin Olive Oil, Garlic, lemon, parsley, basil, and of course, baby clams.
In the Liguria region of Italy, east of Genoa, Spaghetti alle vongole (veraci) means spaghetti with small baby clams in the shell, with a white wine/garlic sauce. Linguine also may be used for the pasta in preference to spaghetti in which we used for this White Calm Sauce recipe.

White Clam Sauce (1 lb. of Linguini or Spaghetti):
3 dozen baby clams (Shuck a dozen & save clam juice)
2 tbsp of minced fresh garlic
¼ cup of Extra Virgin olive oil
¼ cup of chopped fresh Italian parsley
¼ cup fresh basil ribbons
1 teaspoon of crushed red Pepper
1/4 pond of unsalted butter
1/cup of white wine (optional)
Season with salt & black pepper

Note: I was supposed to add the Basil after the linguine. My bad. But still very very good!
Final thoughts: Was it that creamy? No. But boy was it delicious! Adding a little extra cream couldn't hurt. And maybe add some parmesan directly to the sauce. I didn't use all the pasta. As your adding the pasta in, gauge how saucy you want it.
INGREDIENT LIST
12 oz uncooked linguine (from 16-oz package)
2 tablespoons butter
1/3 cup Progresso™ panko crispy bread crumbs
1/3 cup shredded Parmesan cheese
1 teaspoon grated lemon peel
2 tablespoons chopped fresh basil leaves
1 tablespoon olive oil
2 cloves garlic, finely chopped
1/2 cup chopped onion
1 can (15 oz) Progresso™ white clam sauce with garlic & herb
1/3 cup dry white wine
1/4 cup heavy whipping cream
1/4 teaspoon crushed red pepper flakes
PREPARATION
In 4-quart saucepan or Dutch oven, cook linguine as directed on package; drain.
Meanwhile, in 8-inch skillet, melt butter over medium heat. Add bread crumbs; cook 2 to 3 minutes or until browned. Remove from heat. Stir in Parmesan cheese, lemon peel and 1 tablespoon of the basil; set aside.
Meanwhile, in 12-inch skillet, heat oil over medium heat until hot. Stir in garlic and onion; cook 1 to 2 minutes, stirring occasionally, until tender. Stir in clam sauce, wine, whipping cream and pepper flakes. Heat to boiling. Reduce heat to medium-low; simmer 5 minutes, stirring occasionally to blend flavors. Add linguine and remaining 1 tablespoon basil; toss to coat. Transfer pasta to serving platter; sprinkle with bread crumb mixture.
