1/2 c Sliced peaches
-- (fresh, frozen or canned) 1/2 c Low-fat vanilla yogurt
2 tb Wheat germ
OPTIONAL:
Raspberries or blueberries -- (fresh or frozen) Place peaches in small bowl; top with yogurt and wheat germ. Garnish with raspberries or blueberries. Per Serving: About 190 cal, 11 g pro, 31 g car, 3 g fat, 14% cal from fat, 5 mg chol, 75 mg sod.

Frozen PB&J Parfaits | Simple Breakfast Recipe | Safeway
Learn a new take on a granola parfait! This easy and delicious after-school snack is a fun twist on a classic favorite.
INGREDIENTS
For Frozen PB & J Parfait:
3 cups Vanilla Greek Yogurt
1 1/2 cups Peanut Butter Granola (recipe included) or O Organics® granola
8 oz Strawberries
1 Tbs Honey
For 5-Ingredient Peanut Butter Granola ingredients:
1/2 cup O Organics® Crunchy Peanut Butter
1/2 cup O Organics® Pure Maple Syrup or Honey
2 cups Oats
1/2 cup Shelled & Roasted Sunflower Seeds
1 Tbs Coconut Oil, Melted
1/4 tsp Kosher Salt
DIRECTIONS
For Frozen PBJ Parfait:
1. Remove hull of strawberries and dice. Place strawberries in a bowl with honey, and using a fork smash until they reach a jam-like consistency.
2. Line a 12 cup muffin tin with liners. Fill each muffin liner with 1/4 cup vanilla Greek yogurt, 2 - 3 tablespoons Peanut Butter Granola, and top with 1 tablespoon smashed strawberry mixture (and more chopped strawberries if desired).
3. Freeze for 3-4 hours or overnight. Remove and place in plastic zip-top bag for freezer storage.
4. When ready to eat, put one in a bowl and let it thaw slightly. Enjoy an ice-creamy and crunchy PBJ treat!
5. Remove and let granola cool, then break into bite sized pieces and store in an airtight container.
For 5-Ingredient Peanut Butter Granola:
1. Preheat oven to 275 degrees F.
2. In a medium sized bowl, whisk together maple syrup and peanut butter.
3. Stir in the rest of the ingredients. Pour ingredients onto a flat baking sheet covered with parchment paper.
4. Bake for 30 - 35 minutes (a little longer for more crunchy granola, a little shorter for more chew granola).
5. Remove and let granola cool, then break into bite sized pieces and store in an airtight container.
PRO TIPS:
– Cupcake liners keep it fun while avoiding any messy clean-up
– After freezing, put individual parfaits in a zip-top freezer bag so they can be eaten anytime
– Slightly thaw before eating
– This recipe is perfect for little helping hands! Have kids help you assemble so they are excited to eat what they've helped to create
– Homemade strawberry jam cuts down on the sugar and keeps the whole fruit intake so all the nutritious fiber is preserved
