1/2 c Shortening 1/2 c Honey 1/2 c Brown sugar 1 Egg, well-beaten 1/2 c Peanut butter 1 t Salt 2 c All-purpose flour 1/2 t Baking soda Cream shortening, honey and sugar together till light and fluffy. Add well-beaten egg. Add peanut butter and salt. Stir in flour and soda sifted together and mix well. Form into small balls of dough and place on greased cookie sheet. Press with fork. Bake at 350F for 8 to 10 minutes.

October is National Cookie Month, but because I'm in Boston without an oven, I was discouraged. However, I found this no bake cookie recipe that I wanted to make a bit healthier. I have been eating two of these about 10-15 minutes before my morning run. They give me energy and the feeling of satisfaction without feeling full.
