Today I'm going to share with you how to take these four ingredients, make a healthy banana cookie, and then three more variations of it. So you can enjoy it with just the perfect flavor that you desire. Well, thanks for letting me share this with you, I get to share with you guys a recipe for excellent health. And that includes being competent in the kitchen, confident with your health, and most importantly, confident and understanding how much God really loves you and He cares for you.
Healthy Banana Cookies Recipe
3 ripe bananas
2 cups of oats (old fashioned or quick-cook)
1 teaspoon vanilla extract
1/2 cup of oil or 1/2 cup of applesauce or 1/2 cup pumpkin butter
Now this recipe is one of many that I have in the healthy treasures cookbook. It's a cookbook if you just want healthy food that tastes good. Alright, it's just been a great addition, I use it almost every week. This week, I probably have used it almost every day because it has such great recipes.
I can't wait for you to try these if you haven't already. So perfect for hiking, biking, doing activities throughout the day with your kids, your grandkids. You're going to love these. I can't wait to read your comments on how you like them best. So many ways you can change this up with nuts, seeds, different fruits, anything you could do so much with this recipe. Ingredients:
1-1/4 cups all-purpose flour
1/2 cup granulated sugar
3/4 teaspoon baking soda
1-1/2 large ripe Bananas
1/2 cup creamy peanut butter
2 tablespoons butter
Method:
Preheat oven to 350° F - 180° C.
1. Sift or mix together the flour, sugar and baking soda.
2. In separate bowl, mash up bananas. Add margarine (or butter) and peanut butter. Then beating mixture till all is blended and creamy.
3. Pour the mixture of bananas, butter and peanut butter into the bowl of mixed flour, sugar and baking soda, mix throughly
5. Butter pans or place waxing paper unto pan.
6. Shape the cookie dough into little balls and place them onto pan.
7. Bake 12 to 15 minutes or until the cookies are slightly brown. Allow them to cool down; they will become crisp.

Peanut butter and banana make for the ultimate duo in this cookie recipe. If you have some ripe bananas that need to be used up, forget banana bread — make these peanut butter banana cookies instead!

What’s better than our super soft and tender peanut butter cookies? Why peanut butter and banana oatmeal cookies, of course. Treat yourself to your childhood favorite sandwich in a delightfully and delectably sweet cookie.
Peanut Butter & Banana Oatmeal Cookies
1 cup, 226g, butter, softened
1 cup, 10ozs., 282g, creamy peanut butter
1 cup, 244g, packed light brown sugar
1 cup, 230g, white sugar
1 very ripe banana
2 large eggs, 100g
1 teaspoon, 5ml, vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon kosher salt
1 cup quick cooking oats
2¾ cups, 480g, all-purpose flour
In a large mixing bowl, cream the softened butter and peanut butter until combined. Add the sugars and cream on medium-high until the mixture is light and fluffy. This will take a few minutes. Add the banana and cream completely. Add the eggs and vanilla and continue creaming until the mixture is very light and fluffy. Add the salt, baking powder and soda and mix thoroughly. Add the oats and mix on medium low until completely combined. Add the flour in two additions on very low speed until just combined, do not overmix. If the dough is very soft, scrape down the sides and refrigerate dough for 30-40 minutes.
Preheat oven to 350°F, 180°C, gas mark 4 with the convection fan on if you have it. Scoop dough using a #40 disher or 1½ tablespoons. Place a few inches apart on a parchment lined insulated baking sheet. Bake for 10 minutes. Cookies should be slightly underdone. Allow to cool slightly before serving.

1/4 cup coconut oil
1/2 cup coconut sugar
1/3 cup Peanut Butter
1 mashed ripe banana
1 egg
1 teaspoon vanilla extract
1/2 cup coconut flour
1/2 cup almond flour
1 teaspoon Baking Powder
Peanut butter banana oatmeal raisin cookies(flourless cookies)
Peanut Butter Banana Oatmeal Raisin Cookies(Flourless)
2 (285 g, approx. 1.25 cups) ripe bananas, mashed
1/2 cup (125 g) natural peanut butter (or other nut or seed butter of choice)
2-3 tbsp maple syrup or coconut sugar, or stevia to taste(i used honey
1/2 tsp sea salt
1/2 tsp pure vanilla extract
2 cups (225 g) quick oats
1/4 cup (45 g) dairy-free chocolate chips or 1/4 cup add-in of choice such as chopped nuts, raisins or dried cranberries (add up to 1/2 cup if you want and feel free to mix and match!)(I USED RAISINS!!!)
Preheat oven to 350 degrees
Mash ripe bananas in mixing bowl, then add the rest of the ingredients. Roll into ball(about walnut size or golf ball size),or drop by a couple of tablespoon fulls on your silicone baking mat on your cookie sheet. Then wet hands to dampen them and mash the tops of the balls down alittle.(Wetting the hands helps the dough balls not stick to your hands). And bake in the oven for 12- 15 minutes,They should be firm and slightly browned when done. Let cool then enjoy!
Note: I love using Tupperware's silicone wonder mat when baking cookies, it helps to get evenly baking and a nonstick solution.
