How To make Peanut Butter and Jelly Streusel Bars
1/2 cup vegetable shortening
1 1/4 cups light brown sugar, packed
3/4 cup creamy peanut butter
3 tablespoons milk
1 tablespoon vanilla extract
1 egg
1 3/4 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon salt
1 cup strawberry jam

Preheat oven to 350 degrees; grease a 13 x 9 x 2-inch baking pan. In a large bowl with an electric mixer on medium speed, beat the shortening, brown sugar, peanut butter, milk and vanilla extract until well blended. Add the egg; beat just until blended. In a mediu bowl, combine the flour, baking soda and salt. With the mixer on low speed, add the flour mixture to the shortening mixture; mix just until blended. Press 2/3 of the dough in teh bottom of the prepared pan in an even layer. Spread the jam evenly over the dough to within 1/4-inch of the sides. Combine the remaining dough with the oats; drop by spoonfuls onto the jam layer. The dough will be stiff. Press lightly to even out the dough layer. Bake for 20 to 25 minutes, or until the edges and streusel topping are lightly browned. Cool completely in the pan on a wire rack. To serve, cut into bars.

(For 10” Camp Oven)
Ingredients:
1 can (15 oz.) garbanzo beans, rinsed
2 tbsp. honey
2 tsp. vanilla extract
½ cup creamy peanut butter
2/3 cup old=fashioned rolled oats
½ cup roasted unsalted peanuts
1 tsp. baking powder
½ tsp. kosher salt
¼ tsp. baking soda
1/3 cup sugar free raspberry preserves
Directions:
1. Empty rinsed & drained garbanzo beans into a medium sized bowl. Using a potato masher or fork, mash the beans. Remove the skins of the beans that separate from the beans as they are mashed.
2. Add the honey & vanilla, mixing continuously until mixture becomes smooth. Add the peanut butter, blend in by scraping the sides of the bowl.
3. In a small bowl, mix together the oats, peanuts, baking powder, salt and baking soda.
4. Combine the dry peanut mixture to the wet bean mixture to make a dough. Dough will be chunky. Remove 1 cup of dough and set aside.
5. Prepare the camp oven with grease or parchment paper. Press the remaining dough evenly across the bottom of the camp oven. Spread the raspberry preserves on top of the dough. Crumble the reserved cup of dough over the raspberry preserves.
6. Place the lid on the oven and place 7 briquettes under the oven, 14 briquettes on the lid. Bake at 350°F for 30 minutes or until golden brown and edges pull away from the pan or parchment paper. Remove oven from heat and allow 15 minutes to cool before removing from oven.
7. Remove baked goods from oven and place on a wire rack, to cool completely. Cut into squares and enjoy the nutty goodness!!!

Peanut Butter and Jelly Bars
My father-in-law affectionately nicknamed me NicNac so I am christening my viewers NicNackers. :)
Have a lot of jelly and don't know what else to make besides toast for breakfast or PB&J sandwiches for lunch? Here's an idea for a couple of jars of the recent raspberry jam we made. Recipe calls for 1 1/2 cups but Bekah and I agree we'll up it to 2 the next time we make them. Enjoy!
