How To make Pesto Chicken& Pepper Wraps
2/3 cup pesto sauce
* see note
3 tablespoons red wine vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper
1 1/4 pounds chicken breast or thighs:
boneless and skinless 2 red bell pepper
stemmed, seeded :
halved 5 flour tortillas (8 inch)
5 slices mozzarella cheese
5 lettuce leaves
orange slices red and green chiles fresh basil sprigs
*NOTE: You can use homemade or store-bought pesto sauce. If using frozen pesto, thaw before using. Combine 1/4 cup pesto, vinegar, salt and black pepper in medium bowl. Add chicken; toss to coat. Cover and refrigerate at least 30 minutes. Remove chicken from marinade; discard marinade. Grill chicken over medium-hot briquets about 4 minutes per side until chicken is no longer pink in center, turning once. Grill bell peppers, skin sides down, about 8 minutes until skin is charred. Place bell peppers in large resealable plastic food storage bag; seal. Let stand 5 minutes; remove skin. Cut chicken and bell peppers into thin strips. Spread about 1 tablespoon of remaining pesto down center of each tortilla; top with chicken, bell peppers, cheese and lettuce. Roll tortillas to enclose filling. Steak Wrap
2 tbsp mayonnaise
1 tsp prepared horseradish
3-4 oz steak, thinly sliced OR sliced roast beef
½ cup arugula
½ red bell pepper, cut into strips
In a small bowl combine mayonnaise and horseradish.
On a large tortilla layer horseradish mayo, arugula, red pepper and
beef.
Wrap and enjoy!

Ingredients -
Chicken & Seasoning -
1 Tbsp (40ml) - Olive Oil
2 - Chicken Breast, Butterflied & Halved
1 tsp (2.5g) - Garlic Powder
1 tsp (2.5g) - Sweet Paprika
1 tsp (1.5g) - Dried Oregano
1/2 tsp (0.5g) - Chilli Flakes
Seasoning To Taste
Pesto -
1 - Garlic Clove
15g (0.5oz) - Parmesan Cheese, Freshly Grated
10g (0.5oz) - Pinenuts, Toasted (Use alternative nuts to cut cost)
1 - Large Bunch Of Fresh Basil, Picked
2 1/2 Tbsp (50ml) - Extra Virgin Olive Oil
1/2 - Lemon, Juiced
Seasoning To Taste
Extra Virgin Olive Oil To Adjust Consistency
Bread & Fillings -
2 tsp (10ml) - Olive Oil
2 - Ciabatta Rolls or Bread of Choice
1-2 - Tomatoes, Thinly Sliced
4-5 - Mozzarella Slices Per Panini
Seasoning To Taste
