Tortilla Soup Recipe
1 pound boneless skinless chicken breasts (cooked and cubed)
2 Tbsp Mexi-Cajun Seasoning from Heaven Made Products
8 cups chicken stock
½ teaspoon kosher salt
1 teaspoon fresh ground black pepper
1 teaspoons Garlic powder
1 teaspoon Onion powder
2 teaspoons ground Cumin
1 teaspoon Mexican Oregano
2 Poblano Peppers (roasted, de-seeded & chopped)
1 Red Bell Pepper (de-seeded & chopped)
1 cup frozen corn
1 (15 ounce) can diced tomatoes
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can yellow hominy, drained and rinsed
3 teaspoons Chili Powder
Optional garnishes:
Lime Juice
Mexican blend shredded cheese
Tortilla strips
Sour Cream
Guacamole
1) Season chicken with Mexi-Cajun seasoning or your favorite seasoning blend. Grill or cook in oven until 165F Internal temp.
2) Heat chicken stock in a stockpot over medium-high heat.
3) Add cubed/cooked chicken and remaining ingredients. Once boiling, lower heat and simmer 30 minutes stirring occasionally.
4)Adjust salt & pepper if needed and serve. Top with your favorite garnishes and enjoy!!!

Preparation
1. Combine first 5 ingredients in a large bowl; set 1 1/2 teaspoons spice mixture aside. Add pork to remaining spice mixture in bowl, tossing well to coat.
2. Heat 2 teaspoons oil in a large Dutch oven over medium-high heat. Add pork mixture to pan; cook 5 minutes or until browned, stirring occasionally. Remove pork from pan; set aside. Add remaining 1 teaspoon oil to pan. Add onion, bell pepper, and garlic; sauté 5 minutes or until tender, stirring occasionally. Return pork to pan. Add reserved 1 1/2 teaspoons spice mixture, broth, hominy, and tomatoes; bring to a boil. Partially cover, reduce heat, and simmer 25 minutes.

Constantly skim the top of broth to have a clean and smooth broth
✅the white corn dried hominy can be found at your local Mexican Supermarket or at your local supermarket in the Hispanic aisle.
✅ it is very important for the dried/raw hominy to soak overnight, this helps to soften them I usually soak for 24 hours so it cooks along with the meat ☺️

Salt
4lbs pork shoulder
2 lbs neck bones
1 whole onion
1 head of garlic
3 bay leaves
25 New Mexico chile pods
3 chile ancho
1/4 onion
3 garlic cloves
1 tbsp oregano
2 tsp ground cumin
1 tbsp chicken bouillon
