How To make Pot Roast with Sour Cream Gravy
1 2-3 lb. pot roast
1/2 c Water
3 Med. carrots cut in 2" pcs.
1 Carton sour cream (8 oz.)
2 tb Cooking oil
3 Med. potatoes, peel, quarter
3 Med. onions, quartered
1 tb Flour
Brown roast on all sides in hot oil in lge. roaster or Dutch oven. Add water. Cover and simmer about 2 1/2 to 3 hrs. Add vegetables. Cover and simmer 30
min. or until vegs. are tender. Remove roast and vegs. to serving dish. Drain off all but 2 tbs. drippings, sift flour into drippings. Make reux, stirring constantly. Add water to drained off drippings to make 1 cup. Stir into flour and cook, stirring constantly, until smooth and slightly thickened. This quick and easy instant pot roast beef is perfect for Sunday dinner! Learn how to cook a chuck roast in the instant pot with this easy recipe.I served mine with garlic mashed potatoes, buttered green beans, and cornbread. Pressure cooking a pot roast is an quick way to throw a meal together that is absolutely delicious!
Note: If you want a tender, but not falling apart roast, do about 20 min a lb like me. I could cut my roast and it could keep some shape but it was tender. If you like that falling apart roast then do 25 min a lb OR you can cut your roast into smaller pieces.

3 lb Beef Chuck Roast
4 Large Carrots( 1 lb)
5 Red Potatoes (1 1/2 lb)
2 Celery Sticks
1 large onion
6 Garlic Cloves
3 Tbsp all-purpose Flour
2 Tbsp canola oil
2 Tbsp Green Seasoning Mix
1 Tbsp garlic powder
1 Tbsp onion powder
2 tsp Smoked mild paprika
1 Tsp Sazón seasoning
Salt and pepper to taste (recommended: 1 1/2 tsps Salt | 1 Tsp black pepper)
2-3 cups, beef broth(add more as needed)
1/2 cup red wine (sub w/ beef broth; if desired)
2 Tsp Worcestershire Sauce
2 sprigs fresh Rosemary
Creamy Mashed potatoes:
6 red potatoes
4 garlic cloves
4 Tbsp butter
3/4 cup heavy cream
2 Tbsp sour cream
1 Tsp onion powder
1/2 Tsp salt
1/2 Tsp black pepper
Green beans:
Green beans
2 Tbsp butter
1/2 Tsp garlic powder
1/2 Tsp onion powder
1/8 Tsp black pepper
1 packet Salad & Vegetable seasoning (Goya Brand)
2 Tbsp water
