How To make Potato and Leek Casserole
3 c Leeks, well-scrubbed, cut
-into 1/2-inch pieces 1/2 c Carrots
shredded
2 tb Olive oil
Salt and pepper to taste 1 t Rosemary, powdered, dry
1 c Vegetable broth
2 lb Potatoes, red :
unpeeled,
-sliced in thin rounds 1/4 c Parsley or chives (or mixed)
-finely chopped
Preheat oven to 375 degrees. In deep skillet, coat leeks and carrots with olive oil. Cover and simmer over low heat until soft. Add seasonings. Mix well. Layer a well-oiled 2 1/2-to 3-quaart casserole (with cover) with 1/3 of the potatoes, then 1/2 the seasoned vegetables. repeat and finish with last 1/3 of potatoes. Pour broth evenly into casserole. Cover and bake for 50 minutes covered at 375 degrees. Uncover and bake for another 20 minutes. Garnish with parsley and chives. Variation: Substitute carrots with zucchini if desired. As known potato and leek are a perfect match and especially in cream puree. Serve it as a separate dish or side one for fried chicken, rolled meat or fish. One advice – add milk gradually and to your taste. Amount of milk differs depending on a variety of potato.

✅ Ingredients:
• potato – 2,6 lb /1200 g
• leek – 9 oz /250 g
• butter – 2 oz /60 g
• milk – 2 fl oz /50 ml
• parsley leaves – ½ oz /15 g
• salt – 2 tsp
✅ You will need:
• stockpot
• carving board
• potato masher

1. Cut the peeled potato into medium pieces and lay into a stockpot. Pour with cold water covering the potato.
2. Bring to a boil and cook over low heat for 5 minutes.
3. Add the chopped leek, bring to a boil and keep cooking over low heat for about 20 minutes until readiness of potato.
4. Drain the hot water. Add the butter, warm milk, chopped parsley, salt and pepper, crush the potato and leek with a masher.
5. Stir and serve to the table.

Thinly sliced potatoes are combined with butter, cream and tons of cheese before being baked to a bubbly, golden perfection. Simple to prepare and fantastic for entertaining.

INGREDIENTS
3 ounces Butter
1 garlic clove minced
4 tablespoons cornstarch
1 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
2 cups low-fat milk
2 cups shredded white cheddar
5 cups thinly sliced yukon gold potatoes
INSTRUCTIONS
Preheat oven to 350°.
In a large saucepan, melt the butter over low heat. Stir in the garlic and cook 1 minute. Whisk in the cornstarch, salt and pepper until smooth.
Gradually add the milk and bring to a boil. Cook the sauce stirring constantly until thickened, approximately 2-3 minutes.
Remove from heat and stir in 1 1/2 cups of the cheese until melted. Stir in the potatoes.
Transfer to a 2 quart baking dish coated with cooking spray. Sprinkle with the remaining cheese. Cover and bake 30 minutes. Uncover and bake an additional 30-45 minutes or until the potatoes are tender and the sauce is golden brown and bubbling.
Remove from the oven and allow to stand 5-10 minutes before serving.
