How To make Rum Flan Cake
1 c Sugar
3 Egg yolks
2 Eggs
13 oz Evaporated milk
1 t Grated orange peel
2 tb Rum
CHIFFON CAKE BATTER:
3/4 c Sifted cake flour
1/2 c Sugar
1 t Baking powder
1/4 ts Salt
2 Egg yolks
3 tb Oil
1 tb Rum
3 tb Orange juice
3 Egg whites
1/4 ts Cream of tartar
TO SERVE:
Whipped cream
Caramelize 1/2 cup sugar in 9-inch (about 3 1/2- to 4-inches deep) heart-shaped or round pan. Beat
together 3 egg yolks, eggs, 1/2 cup sugar, evaporated milk, orange peel and 2 tablespoons rum. Set aside. To make cake batter, sift flour with 1/4 cup sugar, baking powder and salt. Place in small bowl and make well in center. Place 2 yolks, oil, 1 tablespoon rum and orange juice in well. Stir until blended, starting from center. Beat egg whites with cream of tartar until foamy. Gradually add remaining 1/4 cup sugar, beating until stiff but not dry. Gently fold batter into whites. Pour custard mixture into caramel-lined pan. Gently spoon cake batter over flan mixture. Place pan in larger pan and pour hot (not boiling) water into larger pan until it reaches half depth of cake pan. Bake at 325F 50 to 60 minutes, or until cake is done. Cool on rack or chill until ready to serve. Invert onto serving platter and pipe whipped cream rosettes around edges of flan. (C) 1992 The Los Angeles Times

Ingredients :
5 Eggs
2 Cans of Sweetened Condensed Milk (14oz)
1 Can of Evaporated Milk (12oz)
1 Can Of Table Cream (7.6oz)
1-1/2 TSP of Dark Rum
1/2 Cup of Sugar
Instructions:
Preheat Oven to 350-F
Beat the eggs well, make sure not to make bubbles, if it happen just run it through a strainer.
On a separate bowl mix the condensed Milk, evaporated milk, table cream and rum together then add the egg mixture until you get a homogeneous mix.
For the caramel: on low heat pour the sugar and cook until the caramel gets golden brown. Carefully spread the caramel inside the baking pan until it covers the walls. Let cool.
Pour previous mix into baking pan and take it to the preheated oven, over a larger pan with enough water to cover half way up the small pan for 1 hr or until knife comes out clean.
refrigerate over night before turning, and ready to serve...ke/

Cassava Leche Flan Pudding
This recipe was a result of a cake which I tasted when I visited a beach resort in the North of Cebu. I enjoyed the cake so much that I decided to replicate it the moment I was back in my kitchen. I do not know if this is how they made it but it tasted just like it and I was happy with the result.
Chef’s Notes:
In the video tutorial, I baked the cakes in 3 baking pans. I should have just baked them in 2 baking pans because 3 was too thin. For the photo shoot, I stacked 2 layers together so the cake looked taller. Just in case you are wondering.

Easy Flan ~ Using Flanera Pan

Ingredients:
3/4 cup of sugar
4 eggs
140z can of sweetened condensed milk
1 1/2 cups of milk
1 tsp of vanilla extract
The zest of an orange or lemon, this is optional
Directions:
In a sauce pan melt sugar under medium heat until it’s an amber color. Pour into your flan pan. Use caution this is very hot! And set aside while you make your flan mix.
In a bowl add eggs, the 2 milks, vanilla and zest and mix. You can use a blender if you like. Then pour into flan pan over caramelized sugar and clamp shut. Place in a larger pan and pour hot water halfway up the pan.
Bake at 350 for 1 hour and 15 minutes. Take out and let cool and then place in the refrigerator to cool for at least 3 hours or over night. Place a plate over your flan pan and flip it. Cut into wedges! Garnish with fruit and whipped cream if you like.
Serve and Enjoy! ♥
