How To make Santa Maria Beans
1 lb Pink, red or pinto beans
1 Bacon slice; diced
1/4 c Diced cooked ham
1 Sm. garlic clove; minced
3/4 c Tomato puree
1/4 c Canned red chile sauce
1 tb Sugar
1 ts Dry mustard
1 ts Salt
1 ds MSG (optional)
In Santa Maria, California, famous for its barbecue, cooks prepare a menu that includes these beans. Traditionally, small pink beans grown locally would be used, but small red beans or pintos can be substituted. Cover beans with water and soak overnight. Drain and cover with fresh cold water and simmer 2 hours, or until tender. Meanwhile, saute bacon and ham until lightly browned. Add garlic and saute 1 or 2 minutes, then add tomato puree, chile sauce, sugar, mustard, salt and MSG. Drain most of liquid off beans and stir in sauce. Keep warm over very low heat, or in low oven until ready to serve. Makes 6 to 8 servings.

Instant Pot Pinquito Beans vegan
Instant Pot Pinquito beans vegan is the recipe for today! This is a vegan style version of Santa Maria style pinquito beans. This one is vegan, no oil and gluten free. Pinquito beans made in the instant pot is so easy and you can feed a small army with this recipe.
Ingredients
2 cups pinquito beans (you can use pink or pinto beans) rinsed.
1/2 of a chopped onion
1 14.5 oz can of Mexican tomatoes(you can use any tomatoes of your choice)
3 to 4 cups veggie broth
2 tablespoons of minced garlic
1 tsp. chili powder
1 tsp onion powder
1 tsp garlic powder
1 tsp smoked paprika
1/2 tsp dry oregano
1 tsp salt
black pepper to taste
1 tsp apple cider vinegar
1 tablespoon mustard of your choice
Set instant pot to saute and add a little water or veggie broth.
Add onion and garlic and saute for a few minutes adding moisture as needed.
Add the rest of the ingredients and set instant pot to manual for 45 to 60 minutes depending on how soft you like your beans.
Make sure it is on seal. Once it is done let the steam release naturally.
** feel free to change up the spices or add some cayenne pepper if you like more heat. You could even add a chopped jalapeno pepper.
