Christmas Stuffing with Bacon

Ingredients
8 ounces applewood-smoked bacon, chopped into 1/2-inch pieces
Rice:
4 1/2 cups low-salt chicken broth
3 tablespoons chopped fresh thyme
1 1/4 cups short-grain brown rice
1 1/4 cups wild rice
Vegetables:
2 tablespoons unsalted butter, at room temperature
2 tablespoons extra-virgin olive oil
One 14-ounce bag frozen pearl onions, thawed
1 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
12 ounces (3 large) portobello mushrooms, shredded or thinly sliced
8 ounces Brussels sprouts, trimmed and thinly sliced
1/2 cup hazelnuts, toasted, husked, coarsely chopped, optional
Directions
Cook the bacon in a large skillet over medium heat until crisp, 8 to 10 minutes. Using a slotted spoon, drain the bacon on paper towels.
For the rice: In a heavy saucepan or Dutch oven, bring the broth and thyme to a boil over medium-high heat. Add the brown and wild rice. Cover the saucepan and simmer until the rice is tender but still chewy, 30 minutes. Turn off the heat and allow the rice to stand for 10 minutes. Fluff with a fork.
For the vegetables: In the same skillet used to cook the bacon, heat the butter and oil over medium-high heat. Add the onions and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring occasionally until light golden, about 5 minutes. Add the mushrooms, 1/4 teaspoon salt and 1/4 teaspoon pepper. Cook until softened, about 8 minutes. Add the Brussels sprouts and the remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Cook for 5 minutes.
Transfer the vegetable mixture to the saucepan of cooked rice. Add the hazelnuts and cooked bacon. Toss until all the ingredients are mixed. Transfer to a large bowl and serve.
Cook's Note
The rice can also be cooked in 4 cups of broth and 1/2 cup of water. To toast the hazelnuts, arrange in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven until lightly toasted, 8 to 10 minutes. Cool completely before using.

Frozen Food Review - Is There Anything Healthy In The Freezer Aisle?!
I headed the frozen food section of Walmart to see if I could find anything healthy. I reviewed all different types of frozen foods, pizza, breakfast, vegetarian, seafood, and more...and I was very happy to see some really high quality frozen food options! I tried to avoid frozen foods that had to many fillers and preservatives and the ones that used bad quality oil. I was so happy to find great products using really high quality ingredients, even for pizza and burritos. All you have to do is read the ingredient list for the frozen food, and you can easily spot the ingredients you want to stay away from. Mad love Bobby...Dessi...and Art! XOXO

INGREDIENTS
2 Tbsp (30 ml) cooking oil
1 cup long-grain rice (rinsed)
1/2 small onion (diced)
1 celery stick (diced)
1 to 2 cloves fresh garlic (minced)
2 cups (473 ml) water
1 Tbsp (10 to 14 g) chicken bouillon powder
10 oz (283 g ) frozen chopped broccoli (thawed)
4 oz (113.5 g) American processed cheese
4 to 6 oz (113 to 170 g) sharp cheddar cheese
1/4 to 1/2 tsp black pepper
* buttered 2.7 Quart baking dish or 8 x 12
**CREAM SAUCE**
2 Tbsp (30 ml) cooking oil
8 oz mushrooms (diced)
2 Tbsp (28 g) unsalted butter
3 Tbsp ( 27 to 30 g) all-purpose flour
1 Tbsp (10 to 14 g) chicken bouillon powder
1 1/2 cups (375 ml) water
1 cup (236.5 ml) heavy cream

Sausage Cheese Muffins - Lynn's Recipes
A quick and easy savory muffin recipe that can be served for breakfast, brunch or as an accompaniment to soup. These can also be frozen in individual ziploc bags and pulled out as needed for a quick breakfast.
1 pound breakfast pork sausage
1 (10.75 ounce) can condensed cheddar cheese soup, undiluted
½ cup milk
2 teaspoons rubbed sage
3 cups baking mix
In a skillet over medium heat, cook sausage until no longer pink; drain. In a bowl, combine soup, milk, sage and sausage. Stir in the biscuit mix just until moistened. Fill greased miniature or regular muffin cups two-thirds full. Bake at 400° F for 20 minutes or until muffins test done.
