CAKE:
6 lg Eggs
1 c Sugar
1 t Vanilla Extract
4 oz Unsweet. Baking Chocolate -
Melted 1 c Flour Sifted
:
SYRUP 1/4 c Sugar
1/3 c Water
2 tb Kirsch
:
FILLING 1 1/2 c Confectioners' Sugar
1/3 c Unsalted butter
1 lg Egg Yolk
2 tb Kirsch Liquer
:
TOPPING 2 c Sour Cherries :
Canned, Drain
2 tb Confectioners' Sugar
1 c Heavy cream -- whipped
8 oz Semisweet Chocolate Bar (1)
CAKE: Beat eggs, sugar, and vanilla together until thick and fluffy, about 10 minutes. Alternately fold chocolate and flour into the egg mixture, ending with flour. Pour the batter into 3 8-inch cake pans that have been well greased and floured. Bake in a preheated 350F degree oven for 10 to 15 minutes or until a cake tester inserted in the center comes out clean. Cool cakes in pans for 5 minutes; turn out on racks to cool completely. SYRUP: Make syrup by mixing together sugar and water and boiling for 5 minutes. When syrup has cooled, stir in kirsch. Prick the cake layers and pour syrup over all 3 layers. FILLING: To make the butter-cream filling, beat together sugar and butter until well blended. Add egg yolk; beat until light and fluffy, about 3 to 5 minutes. Fold in Kirsch. CAKE ASSEMBLY: To assemble cake, place 1 layer on a cake plate. Spread with butter cream filling. Using 3/4 cup of the cherries, which have been patted dry,
drop cherries evenly over cream. Place second layer on cake. Repeat. Place third layer on top. Fold 2 T confectioners' sugar into the whipped cream. Cover the sides and top of the cake with whipped cream. Decorate top of cake with remaining 1/2 cup cherries. To make chocolate curls from chocolate bar, shave (at room temperature) with a vegetable peeler. Refrigerate curls until ready to use. Press chocolate curls on sides of cake & sprinkle a few on the top. Chill.

Black Forest Cookies with Kirsch-Soaked Cherries ????????????
Perfectly fudgy with crisp edges, filled with dark chocolate and juicy, kirsch (cherry liquor)-flavored cherries and topped with homemade whipped cream, these Black Forest cookies capture the pure deliciousness of the classic Black Forest gateau! Perfect way to enjoy this decadent and iconic dessert with much less effort as these cookies are so quick and easy to make - you don’t even need to chill the dough! Here’s how I made them ????
???????? Ingredients ????????
For the Cookies
• 1 cup (2 sticks, 226g) butter, at room temperature
• 1 cup (200g) light brown sugar
• 1/2 cup (100g) granulated sugar
• 1 egg + 1 egg yolk, at room temperature
• 2 tsp kirsch (you can use the kirsch from the jar of cherries or vanilla extract)
• 2 cups (250g) all-purpose flour
• 1 tbsp cornstarch
• 1 tsp baking soda
• 1/2 cup (42g) cocoa powder
• 1/2 tsp salt
• 1 1/2 cups (270g) 70% cacao dark chocolate chips, or chopped chocolate
• 1 cup (140g) cherries soaked in kirsch cut into quarters and some halves
For the Homemade Whipped Cream
• 1 cup (240ml) cold heavy whipping cream
• 1/3 cup (40g) confectioners’ sugar
• 1 tsp vanilla extract
• Splash of kirsch (optional but so lovely)
Whip the heavy cream, sugar, and vanilla extract on medium-high speed until medium peaks form, about 3–4 minutes.
???????? Directions ????????
In a medium bowl whisk together the flour, cocoa powder, cornstarch, baking soda and salt and set aside. Cream butter and both sugars together in a large bowl, then mix in the egg, egg yolk and Kirsch (or vanilla). Add the flour mixture and mix on low until just combined. Finish by folding in the chocolate and cherry pieces. Scoop about 2.5 tbsp balls of cookie dough (55g each, dough makes 22 cookies). Bake at 350 F/177 C for about 12-14 minutes. Finally, pipe beautiful whipped cream swirls on top of each fully cooled cookie (I used tip 1M). Garnish with a cherry and dark chocolate shavings. Enjoy! ????
My notes:
1. I got my kirsch-soaked cherries on Amazon by a brand called Les Parisiennes. These taste similar to the boozy cherries my grandma used to make in Greece and I loved them so much. They are *really* boozy and if you have too many of them you will probably get tipsy, so not a good idea before driving. For the same reason, these are not suitable for kids or pregnant women, but they are ok once baked in the cookies as the alcohol evaporates.
2. If you can't find cherries soaked in kirsch you can make your own by soaking fresh cherries (washed and pitted) in kirsch overnight before baking. Alternatively, cherries in syrup (like maraschino) work as well but you'll be missing the authentic Black Forest flavor.
TIP: Use a vegetable peeler to make beautiful chocolate curls as shown in this reel.
