How To make Scrambled Eggs
Ingredients

cup
egg, replacers
1
each
onion, chopped
12
each
mushrooms, chopped
2
tablespoon
vinegar, balsamic
1/4
cup
water
1/4
teaspoon
tarragon, dried
3
oz
cheese, fat-free, grated or diced
1
salt, to taste
1
pepper, to taste
Directions:
Saute onion and mushrooms in vinegar and water until soft and the liquid has mostly cooked away.
Combine salt, pepper, tarragon with egg replacers. Mix well. Add to onion/mushrooms. Add cheese and stir into eggs. Scramble until set.
Obviously, a non-stick skillet is essential here. The tarragon goes well with eggs and adds a nice flavor. Many variations on this are possible but I'd stick with the tarragon because it really does work well.

SCRAMBLED EGGS
Ingredients
8 eggs
2 tbsps butter
Salt to taste
Crushed black peppercorns to taste
2 tbsps fresh cream
Chopped fresh chives for garnish
Tossed cherry tomatoes to serve
Toasted brown bread slices to serve
Method
1. Break in the eggs in a bowl and whisk for a few seconds.
2. Heat 1 tbsp butter in a non-stick pan, pour the eggs in to it, mix and cook on low heat till the eggs scramble.
3. Add salt, crushed black peppercorns and remaining butter and mix well. Add fresh cream, mix and take the pan off the heat.
4. Transfer the scrambled eggs into a serving plate, garnish with chives and serve hot with toasted bread slices and tossed cherry tomatoes.

Ingredients:
2 Eggs per person
Salt to taste
Pepper to taste
1 tablespoon (15g) Butter or oil per serving
Salad leaves for serving
Toasted bread
Directions:
1. In a bowl, beat the eggs with salt and pepper.
2. I a medium sized non-stick pan over low heat, melt 1 tablespoon butter.
3. Pour in beaten eggs. Cook for 30 seconds, without stirring, then, using a spatula or a wooden spoon, gently pull the eggs from the edges of the pan into the center. Then, cook, stirring constantly until the eggs are fluffy and cook 80-90%.
4. Turn off the heat when the eggs are 80-90% cooked. Do not overcook.
5. Serve immediately with a toast and fresh salad.
Notes:
• Do not cook the eggs over high heat.
• It is important to turn the heat off when the eggs are not fully cooked, the eggs should be moist and soft.
• If you making only one portion (2 eggs) use small pan.
