How To make Smoky Beef and Black Eyed Peas
16 ounce pkg. dried black-eyed peas
rinsed/picked over
11 1/2 ounce can bean with bacon soup
3 cups hot water
3 medium carrots :
chopped
2 medium onions sliced
1 teaspoon garlic powder
1/2 teaspoon seasoned salt
3 pounds beef chuck roast :
trimmed of fat
in 2" chunks 1 teaspoon liquid smoke hockory flavoring
4 ounce can diced green chilies
1 red bell pepper -- chopped
In a 5-6 quart electric slow cooker, mix together the beans, undiluted soup, hot water, carrots, onions, garlic powder and seasoned salt. Place the roast on top. Press into the bean mixture to cover as much as possible. Cover and cook on the Low heat setting 9-10 hours, or until the beef and beans are tender.
Increase the heat setting to High. Stir in the liquid smoke, chiles, and bell pepper. Cook, uncovered on High for 10-15 minutes longer. Skim any excess fat from the top before serving.

Black-eyed Peas Recipe (soaking peas is optional not necessary)
1 Pack of Peas
5 cut smoked turkey pieces
2-3 tablespoons oil
8 cups water (had more water if needed throughout cooking process)
1 chicken bouillon cube
2 Bay Leaves
3 tablespoons onion powder
1 teaspoon crushed red peppers
1 teaspoon black pepper
salt to taste
1/2 teaspoon sugar (help to balance the flavors)
Note: Please do not skip the first step
Boil the smoked turkey for 30 minutes or more
this is the bulk of the flavor (very important)

4 sliced smoked bacon thick-cut or preferred
sausage link (Kielbasa Sausage by Hillshire Farms) I used turkey but use preferred
bell peppers, red/green diced
2 bay leafs
4-5 garlic cloves
2- 3 Stalks of Celery
1 onion diced
black pepper to taste
cajun seasoning
smoked paprika
1 tsp thyme dried or fresh
1 tbsp chicken bouillon + 4 cups of water combined
3 cups of water
parsley fresh garnish

Smoked Black Eyed Peas on a Pellet Grill
2 Cups Black eyed Peas - Soaked and Drained
1 Package of Bacon
1 Green Pepper
1 Yellow Onion
2 Tbsp Minced Garlic
1 Tbsp Black Pepper
1/2 Tbsp Red Pepper Flakes
I used turkey stock but use whatever liquid you prefer. Water, beef broth, vegetable broth etc. Measure to your preference.
Follow the video, cook until the beans are tender.

1 tsp Oregano
1 tsp Black or White Pepper
1 tsp of minced garlic or fresh garlic
Salt to taste
Cook for 4-6 hour on high in the crockpot
