This Cold Cucumber Avocado Soup makes a delicious and creamy Summer Soup!
Cucumbers are one of my favorite non sweet fruits and right now I eat them every day in Salads or as part of my juIces. I have just planted many in my garden, they are sill baby plants but I can get organic cucumbers from a nearby farm. Also Avocado Season has started and these two combined make a tasty and nourishing soup!
When chilled before serving it will cool you down and also hydrate your body with the high living
water content in Cucumbers! I like to add many fresh and fragrant herbs from my garden for flavor
and you can choose your own, using seasonal herbs. And to top the soup with crunchy garlic basil
crumbs makes it even better!
Cold Cucumber Avocado Soup is so easy and fast to make and it is a great starter for hot summer
days!

Aguacate 4
Yogurt 1
Limón (jugo) 1
Caldo de Pollo 2oz
Sal Al gusto
Granada (decoración)
Preparación:
1- En una licuadora agregar el aguacate, yogurt, el caldo de pollo, limón, y sazonar.
2- Mantener en el refrigerador mínimo por una hora y presentarlo
con la granada.

Siga a nuestro chef de la escuela culinaria por Internet mientras le muestra come hacer esta divina sopa de aguacate! Sirva este plato con trocitos de pan tostado o un delicioso crostini para una sopa saludable verano que alimenta el alma sin alimentar la báscula!
CREMA DE AGUACATE RECIPE:
1 tbsp butter
½ cup chopped onion
1 garlic clove, minced
6 cups chicken stock
3 ripe avocados, peeled and mashed
1 tsp lime juice
1 jalapeño pepper
2½ cups heavy cream
¼ tsp ground cumin
¼ cup fresh cilantro, chopped
Salt and pepper
Preparation
1. Heat the butter in a medium pot over medium heat. Add the onion and cook for about 2 minutes. Add the garlic, jalapeño and cook for about 30 seconds more.
2. Add the chicken stock, lime juice and avocado to the sauce pot and bring to a boil. Reduce the heat to medium and cook for about 5 minutes.
3. Puree the soup and blend until smooth. Add the heavy cream, cumin, salt and pepper.
4. Cook over medium heat for about 5 minutes. Add the fresh cilantro and serve warm.

Ingredientes: 2 cdas de aceite de aguacate (2 tbsp avocado oil), ¼ cebolla blanca (¼ white onion), ¼ pimiento verde (¼ green pepper), ½ tallo de apio (½ celery stalk), 2 cdas de puerro (2 tbsp leek), 2 dientes de ajo (2 garlic cloves), 1 cda de sofrito criollo (1 tbsp creole sofrito), ¼ cdta de pimienta (¼ tsp pepper), 2 cdtas de sal (2 tsp salt), 2 tazas de caldo de pollo o vegetales (2 cups chicken or vegetable broth),
2 a 4 onzas de queso crema (2 to 4 ounces of cream cheese), ½ taza de crema espesa (½ cup heavy cream), ¼ taza de cilantro fresco (¼ cup fresh cilantro), 1 aguacate grande (1 large avocado).
