It's vegan, gluten-free, and guilt-free so enjoy it with lots of pasta!!! My husband doesn't really like eggplants and LOVES this pasta sauce, so even if you aren't a fan of eggplant you definitely should try this recipe!!!

Eggplant Pasta Sauce
RECIPE: Hi Guys, today I’ll show you How to Make Eggplant Pasta Sauce. It’s a quick vegetarian meal, all you have to do is toss this with any type of pasta.
Heat up a pan on medium heat and pour in olive oil. Add chopped onion, a little salt and sauté until golden. Add chopped garlic and sauté less than a minute until cooked. Turn the heat down to avoid burning the garlic. Add diced eggplant, I’m using Italian Eggplant and have left the skins on, you can definitely use another variety a little salt. Stir and cook until soft. Eggplant absorbs oil so add a little more olive oil if you need to. The eggplant is cooked, it’s tender but not mushy, add crushed red pepper and dried oregano. Stir for 30 seconds. Then add crushed tomatoes, canned works well for this recipe. A little salt and sugar. Give it a stir. It’s bubbling. Now, cover and cook on medium low heat for 10 minutes, stirring in between. The sauce is bubbling, has reduced and gotten thicker. Should look like this, if not cook a few more minutes. Taste and adjust salt and sugar if you need to. It’s ready to be tossed with cooked pasta. You can always add some fresh basil leaves, grated parmesan cheese and even a splash of heavy cream or half and half to mellow out the acidity of the tomatoes. Spaghetti with Creamy Eggplant Sauce
Spaghetti with eggplant sauce is delicious and its something quick I came up with one day with ingredients I had to use up. Sometimes, those days are the best days and if you love eggplant and are looking for a new way to use it, here you go! This pasta dish is so creamy and it's pretty a easy dish to execute and the flavour is wicked good!
SPAGHETTI WITH CREAMY EGGPLANT SAUCE
Recipe by Mark Calaminici | Food Loves Company
Serves 4
Ingredients
1 lb Spaghetti
¼ cup extra virgin olive oil
1 medium sized eggplant, cut into small chunks
2 tbsp butter
1-2 garlic cloves, finely chopped
Half of a sweet onion, finely chopped
Chili flakes, optional
Salt
Freshly cracked pepper
½ cup Parmigiano-Reggiano, grated
1 cup ricotta
Method
1. Cook the spaghetti in a large pot of boiling salted water until al dente, according to package instructions. Reserve 1/4 cup of pasta water.
2. In a large frying pan over medium heat, heat extra virgin olive oil, add a handful of eggplant chunks and fry them up until crispy. Remove and place on a plate lined with paper towel and season with salt. In the same pan add the rest of the eggplant, butter and season with salt and freshly cracked pepper. Add onions and garlic and finish cooking until eggplant is tender or fully cooked, about 8-10 minutes, depending on size of diced eggplant. You can add some water to the pan to help with the cooking process.
3. Add eggplant mixture to a blender along with and Parmigiano-Reggiano and ricotta. Add a bit of pasta water and blend until everything is smooth, adding more pasta water if needed.
4. Add the puree to a pan or pot and add cooked spaghetti. Mix and toss adding more pasta water if needed. Enjoy!

PASTA ALLA SICILIANA - #1 Summer Eggplant Recipe
Pasta alla Siciliana is a delicious eggplant pasta recipe with very few ingredients. I make all of my recipes in the way they are often found here in the New York metro area. Most places will use mozzarella or a dollop of ricotta for this recipe instead of Ricotta Salata that's traditionally found on the similar alla Norma recipe. They are both great recipes, but this one, because it uses mozzarella, will be far easier for most of you to make. Hope you enjoy Pasta alla Siciliana!
