How To make Spanish Rice Enchiladas
1/4 c Water
1 Onion, chopped
2 c Fresh spinach, chopped
3 c Cooked brown rice
1 tb Soy sauce
1 ts Ground cumin
5 or 6 c Enchilada sauce 10 or 12 Soft corn tortillas
1. Place water and onion in a medium saucepan. Saute
until onion softens slightly. 2. Add the spinach. Cover and steam until just
tender, 4 to 5 minutes. 3. Remove from heat. Add rice and seasonings. Mix
and set aside. (I would probably use a little wine, Bragg's Amino, and/or some veggie broth instead of the water for sauteing.) 4. Preheat oven to 350 degrees. 5. Spread 1 cup of Enchilada sauce over the bottom of
a casserole dish. 6. Spread a line of the spinach-rice mixtue down the
center of a tortilla. 7. Roll up and place, seam-side down, in the
casserole. 8. Repeat until all of the ingredients are used.
9. Pour the remaining sauce over the tortillas. 10. Cover and bake for 30

In partnership with FaveDiets ( ) recipe site, I realized I have already posted a video on enchilada chicken, but that one was flavored with a commercial sauce. This recipe features a sauce derived from a recipe originally posted on Linda's Low Carb recipe Site. ( I made this recipe earlier this week using it with low carb tortillas, but I wanted to offer an option even for those on Induction.
With that in mind, I adapted my faux fried rice recipe to make it more Mexican, and it really features the flavors. I might suggest adding a cup of chicken broth to the rice initially to further increase the flavor.

Ingredients:
2 TBS oil
1 small onion
3 cloves garlic
3 tablespoons chili powder
2 tsp Ground coriander
2 tsp Cumin
1/2 tsp salt
3 tsp Splenda, or liquid equivalent
16 oz Tomato sauce
Makes 2 cups
Nutrition Info: (1/4 cup)
43 Calories; 3g Fat, 5g Carbs (1.5g Fiber), 1g Protein

⭐️ HOMEMADE ENCHILADA SAUCE 2 WAYS
INGREDIENTS
1 lb lean ground meat of choice
2 tsp light chili powder
1/2 tsp ground cumin
1/2 tsp granulated garlic powder
1/2 tsp granulated onion powder
1/2 tsp salt
pepper to taste
14 to 16 corn tortillas
1/3 cup oil (for softening corn tortillas)
12 oz Colby Jack cheese
ENCHILADA RED SAUCE INGREDIENTS
4 Tbsp cup oil
1/4 cup all-purpose flour
2 Tbsp light chili powder
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
14.5 oz can of chicken broth
*extra water if needed
salt and pepper to taste
**You can substitute the broth with 16 oz of water
and 1 Tbsp chicken bouillon powder

INGREDIENTS
1 lb ground beef (I used 97/3 lean to fat ratio)
1/4 cup diced onions
2 garlic cloves minced
1/2 tsp ground cumin
1/2 tsp salt
pepper to taste
14 corn tortillas
1/3 cup oil (for softening corn tortillas)
12 oz cheddar cheese (or Colby jack cheese)
ENCHILADA RED SAUCE INGREDIENTS
1/4 cup oil
4 tbsp all purpose flour
2 Tbls chili powder
1/4 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1 Knorr brand chicken bouillon cube
2 cups (16 oz) water
**You can substitute the bouillon cube and water with
2 cups of chicken stock or broth
**If using chicken broth, be sure to adjust salt and seasoning to taste
**Bake in a 9x13 baking dish
**Preheat oven to 375 degrees F
**Bake covered for 20 minutes and then uncovered for 10 to 15 minutes.
