How to make the BEST Instant Pot Black Bean Stew and Rice One-Pot
This Instant Pot Black beans and Rice recipe is my new favourite frugal food recipe - a great for anyone trying out a flexitarian diet too. If you aren't familiar with the Instant Pot, this video demos the Instant Pot, Pot In Pot Recipe Method - the brown rice is cooked in the same pot as the stew. All you need is a long legged trivet and a shallow heatproof dish. I use pyrex. That means the whole meal is cooking in one pot and saves power too. Another reason that the Instant Pot is an absolute essential for us frugal foodies.
I'm using dried black beans to cook this dish which keeps it super frugal and reduces waste from cans, which are often plastic lined, too. I buy dried organic black beans in bulk and decant into a kitchen canister as I need them. A great way to save money, especially if you have an Instant Pot or other Electric Pressure Cooker.
Ingredients:
Brazilian Black Bean Stew (meat free)
1 tbsp coconut oil
1 onion, chopped
1 stick of celery, chopped
1 small leek - sliced
1.5 cups of diced crown prince/butternut squash
2 bay leaves
1 clove of garlic - crushed
1 tsp sweet paprika
1 tsp hot paprika (to your taste)
1 tsp chipotle flakes
1 tsp oregano
1 tbsp soy sauce (or tamari)
1 tbsp apple cider vinegar
115g dry black beans (2/3 of a cup)
750 ml vegan stock/water (for the beans)
3 Tbsp tomato puree
Seasoning to taste
Rice:
1 cup white basmati rice
1 cup of water
Simple Garnish:
Parsley/coriander
Fancy Garnish Ideas:
Avocado, lime, pomegranate seeds
This recipe was inspired by the Brazilian Black Bean Stew recipe from Leon - my absolute favourite place for lunch. Here's their recipe and method using canned beans and and cooked on the stove:

Black Bean Breakfast Casserole:
1 c. oil-free hasbhrowns
1/3 c. chopped bell pepper
1/4 c. riced cauliflower
1/2 c. black beans (you can season these with some onion powder & paprika for more flavor if you prefer!)
1 container liquid JUST Egg*
1/4 tsp. kala namak (aka black salt)
1/4 tsp. garlic powder
+ green onions
Bake @ 375F for 45 mins.
*If you don't want to use JUST Egg, I would suggest using a recipe with tofu + chickpea flour such as this one: and add black beans to it!
Cilantro Lime Dressing
1/2 c. white beans
1/2 c. soaked cashews
1-2 cloves garlic (I used 1)
1/2 tsp. salt
1/2 tsp. garlic powder
Juice of 1 1/2 limes
Handful cilantro (use the stems too to avoid waste!)
1/2 - 3/4 c. water (start with less and add more as needed)
1 TBL chopped jalapeño (I subbed with pickled hot pepper rings)
Blend all & taste! Adjust seasoning as needed.
Black Bean Mango Salsa (I loosely followed this recipe)
I modified by using 1 tsp. lime zest + juice of 1 lime & omitted Frank's Red Hot sauce
I also subbed jalapeño with pickled hot pepper rings + added corn & tomato
You can serve this salsa with these oil-free tortilla chips!
Black Bean Taquitos:
I used the black bean filling from this video:
And baked at 375F for 30 minutes, flipping halfway through
Black Bean Brownies:
I modified this recipe by changing oil to almond butter, omitting baking powder & adding 1/3 cup walnuts.
