Cooking Spray 1 t Olive Oil
3 cl Garlic Minced
2 cn (14 1/2 Oz.) No Salt
Whole Tomatoes Drained & Chopped 2 cn (15 Oz.) Cans Black Beans
& Drained 1/2 ts Ground Red Pepper
1/4 ts Fresh Cilantro
Chopped Fresh Cilantro (Opt.)
Coat A Large Nonstick Skillet With Cooking Spray. Add Olive Oil & Place Over Medium Heat Until Hot. Add Garlic. Saute Until Tender. Add Chopped Tomatoes; Reduce Heat & Cook Uncovered 6 Min. OR Until Mixture Is Slightly Thickened. Stir in Beans, Red Pepper & Cilantro. Cover & Cook 5 Min. OR Until Thoroughly Heated. Garnish With Fresh Cilantro If Desired. Serve Over Rice. (Fat 1 G.)

- 1 Lb Smoked Sausage, Cut into rounds.
- 2 to 3 Cans of RED Beans, 15-15.5oz (1 Drained, 1 Not Drained)
- 2.5 Cups Chicken Broth
- 1/2 Bell Pepper, Chopped ( I used 1/4 Red + 1/4 Green)
- 1/2 Cup Onion, Chopped
- 1/4 Cup Chopped Celery
- 1 Tsp Minced Garlic
- 1 to 2 Bay Leaves
- 1/4 Tsp Dried Thyme or 2 Sprigs of Fresh Thyme
- Pinch of Dried Oregano (Less than 1/4)
- 1 Tsp Better Than Bouillion Chicken Base OR Cajun Seasoning

When I shared the Hot Lunch Box Ideas, I showed few clips of what I give inside the thermos jar and many of you wanted to know the recipe of Black beans and brown rice. I cook this recipe two ways, one using red enchilada sauce if I have on hand or just season with salt and red chili powder. Since I personally think that Brown rice and Black beans has its own yummy flavor, I do not try to add too much spices in it but sometimes I add turmeric in it as well!
You can then garnish with your choice of finely chopped veggies like onion, tomato, peppers and so on...

I'm going to make this
mouth-watering black beans
for this recipe we need 250 grams of
black beans that are washed and soaked
for 8 hours coriander leaves 1 large
onion finely cut a puri of 2 Tomatoes 2
tablespoons of ginger garlic and chilli
paste 2 tablespoons of coriander powder
1 tablespoon of red chili powder half a
teaspoon of turmeric powder 1 tbsp of
garam masala 2 tablespoons of cumin
powder 1 teaspoon of cumin seeds salt to
taste oil and asafoetida in order to
pressure-cook our black beans we will
add the black beans into the pressure
cooker and add water almost double the
quantity of black beans about 1 inch
above the black beans then add 1
tablespoon of salt half a tablespoon of
turmeric powder pressure cook the black
beans for 6 whistles in the meanwhile we
will meet the masala now add 1 cup of
oil into the pan then add 1 TSP of cumin
seeds fry them until this butter
then add half a teaspoon of asafoetida
here's a fun fact
asafoetida helps reduce the bloating
that you get after eating black beans
now add 1 finely chopped onion add half
a teaspoon of salt so that the onions
fry a little quicker and fry the onions
until they are golden brown
the onions are now golden-brown we will
now add ginger garlic and chilli paste
that we meet by blending together ginger
garlic and chili then add the tomato
puree from two tomatoes and mix
everything together then add two
tablespoons of chili powder one
tablespoon of coriander powder one
tablespoon of cumin powder
stir and fry until the oil separates
then add one teaspoon of turmeric powder
keep stirring the masala so it does not
burn and turn the flame to medium now
the masala is now cooked really well
as you can see the oil separating the
black beans are almost done in the
pressure cooker after six results turn
on the gas and wait for the pressure to
be released from the pressure cooker
then add the black beans to our masala
as you can see the black beans are just
perfectly cooked and they are ready to
be added into all of us I'll give it a
good mix
and now we will add 1 tbsp of gram
masala add some finely chopped coriander
leaves give it a little mix and then
cook it for 10 minutes with a lid
covered it has been 10 minutes and our
masala is fully cooked along with the
black beans
it looks delicious
and it smells really really delicious
our delicious black beans are now ready
to serve and enjoy I hope you guys enjoy
