How To make Spicy Pepper Steak
Spicy Pepper Steak No. 892 Yields 4 Servings
1 1/2 lb Chuck or Round Steak 1 Cup Celery, Sliced Fine
MARINADE: 1 Cup Green Onion, Sliced 1/3 Cup Soy Sauce 1 Tbls Cornstarch
1 Clove Garlic, Pressed 3/4 Cup Water
1 tsp Paprika Salt
1/2 tsp Ginger, Ground Pepper
1/3 Cup Salad Oil 1 Cup Tomatoes, Diced
1 1/2 Cups Red, Green and Yellow
Bell Peppers, Sliced
Remove seeds and membranes from the bell peppers and slice lengthwise into strips. Cut the beef across the grain into thin strips. Combine the soy sauce, garlic, paprika, ginger and 2/3 of the oil. Add the beef strips, toss to blend and let the beef marinate at room temperature for at least 30 minutes. Prepare the vegetables while the meat is marinating. Remove the meat from the marinade. Strain the marinade and set aside. Heat the remaining oil in a wok or large, heavy frying pan. Add the beef and toss over high heat until the beef is well browned. If the meat isn't tender enough at this time, add a little water and simmer over medium heat for about 20 minutes. Remove the meat and set aside. Add all the vegetables except the tomatoes. Turn up the heat (medium or high) and toss the vegetables, cooking until tender-crisp (about 10 minutes). Add the meat. Mix the cornstarch with water and add to the pan. Cook, stirring steadily, until thickened. Add the tomatoes and salt and pepper to taste. Reheat. Serve over cooked rice or noodles.

Beef pepper steak- a popular stir fry all over the world. The technique I'm sharing will guarantee the beef turns out amazingly tender- no matter what cut of beef you're using. It will taste like very high-quality beef. Stop ordering this dish from your local takeout and make your friend and family a nice meal! It only takes around 10 minutes after you marinate it- it's so easy!

**ALL INGREDIENTS FOR THE BEEF PEPPER STEAK:**
**FOR THE BEEF MARINADE**
- 0.5 pound of beef
- 1 tbsp of light soy sauce [Pearl River Bridge Natural Brewed Light Soy Sauce:
- 1 tbsp of Chinese cooking wine [Shaohsing Rice Cooking Wine:
- some freshly ground pepper
- 1/4 tsp of baking soda.
- 1 tsp of cornstarch
**FOR THE PEPPER STEAK SAUCE**
- 1 tbsp of oyster sauce [1汤匙蚝油] [Lee Kum Kee Panda Brand oyster sauce:
- 1 tbsp of light soy sauce [1汤匙生抽]
- 2-3 tbsp of water [2-3汤匙水]
- 1 tsp of corn starch [1茶匙生粉]
- 1 tsp of sugar [1茶匙糖]
- 1 tsp of freshly ground black pepper [1茶匙新鲜的黑胡椒]
- Some salt to taste. [一小撮盐]
**VEGETABLES FOR STIR FRY**
- some green and red pepper
- some onion slices
- 1 tbsp of minced garlic.
**HOW TO MAKE BEEF PEPPER STEAK STIR FRY**
-First, cut your beef into thin slices.
-Marinate it with 1 tbsp of light soy sauce and 1 tbsp of Chinese cooking wine, you can use regular rice wine too. Some freshly ground pepper, 1/4 tsp of baking soda, 1.5 tsp of corn starch
- Set your beef aside for at least 30 minutes. While waiting we can make the sauce.
- 1 tbsp of oyster sauce, 1 tbsp of light soy sauce, 1/4 cup of water, 1 tsp of corn starch, 1 tsp of sugar, 1 tsp of freshly ground black pepper and some salt to taste. Because soy sauce already has a lot of sodium, don’t put a lot. Just a little pinch should be fine.
- For the vegetables, I prepared some green and red pepper cut into big chunks. Some onion and 1 tbsp of minced garlic.
- Heat up your wok on the highest level possible for 10 seconds and add about 1 tbsp of vegetable oil. Add in your beef. Let the beef fry for 15-20 seconds on each side. Keep turning IT every 15 seconds until the beef becomes brown. Take it out and set it aside.
- Add about 1 tbsp more oil into the same wok and throw in all your vegetables. Stir fry this for about 2 minutes.
- When you see the onion becoming transparent turn the heat to low. Add the beef back into the wok along with the sauce. Mix it quickly. Soon you will see the sauce getting thicker. Turn it off. Take it out and you are done.

Recreating pepper lunch at home.
Sauce:
2 tsp pepper,
2 tsp garlic powder,
2 tbsp honey,
1 tbsp oyster sauce,
3 tbsp soy sauce.
- Cut 1/4 sweet onion into wedges
- Cut a beef steak into slices (I used a ribeye)
- Mix 2 tbsps of olive oil with the beef
- preheat the pan/griddle over medium high heat until you can feel the hot air above with your hand
- put beef into a circle
- put 1 tbsp olive oil in the middle of the circle
- put onion, rice, 1 tbsp butter, pepper, corn kernels, green onions in the middle
- pour over the sauce
- crack an egg on the top of the rice
- mix everything up quickly

Today, we are making Hangjiang Niuliu (杭椒牛柳). Hangjiao means Hangzhou pepper; it is a type of mild green pepper. Niu liu is the beef tenderloin. That is why the English name is so straightforward - pepper steak. This is a super easy but classic recipe. It takes about 15 minutes to cook.

INGREDIENTS
One piece of beef tenderloin 280g
1 tbsp of soy sauce (Amazon Link -
1.5 tsp of dark soy sauce (Amazon Link -
1 tsp of cornstarch
Black pepper to taste
1.5 tsp of cooking oil
150 grams of green pepper
Two cloves of garlic
1/2 inch of ginger
3/4 tsp of salt
1.5 tbsp of Chinese cooking wine (Amazon link -
1-2 tbsp of cooking oil
1/4 tsp of five spice powder
INSTRUCTIONS
Cut the beef into 1/4 of an inch thick slabs. Then, slice each slab into 1/4 of an inch wide strips. Beef tenderloin is pretty expensive, so if you want to go with cheaper cuts, that is ok too, you just need to add 1/4 tsp of baking soda to the marinade to tenderize the meat.
Marinade the beef with 1 tbsp of soy sauce, 1.5 tsp of dark soy sauce, some black pepper to taste, and 1 tsp of cornstarch. Add a drizzle of cooking oil to coat the beef to prevent it from sticking to the wok.
Use a meat tenderizer to smash the green pepper lightly. Slice them with a 45-degree angle. It is actually hard to make authentic pepper steak because you can’t get Hang Zhou pepper in the USA. What I am using is this Korean long hot pepper which gives a similar taste. If you can't handle spicy food, it is ok to use bell pepper.
Besides the chili, you will also need two cloves of garlic and 1/2 inch ginger. Slice them thinly.
Turn the heat to high and heat the wok until smoking hot. Add 1-2 tbsp of cooking oil. Lossen up the beef before adding it to the wok so they don’t tangle together. The wok is super-hot. You only need to stir this for a minute or two. Once all the beef is changed color, turn off the heat. Take the beef out. Be sure to tilt the wok so you can leave the oil in there.
Turn the heat back to medium-low. Toss in the garlic, ginger, and pepper. Stir for a few minutes. Add 3/4 tsp salt. Green peppers like that really need some salt to balance the spiciness and bring out the flavor.
Once the chili becomes a bit soft, you can introduce the beef back into the wok. Turn the heat to high. Add a few shakes of 5-spice powder or 13 spice powder. Drizzle some Chinese cooking wine from the side of the wok. Keep stirring for a minute or 2. You are done.
