How To make Steve's Mum's Lentil Soup
1 lb Lentils (washed)
1 Large onion
3 Cloves garlic
4 oz Mushrooms, sliced
2 Ribs of celery, sliced diag.
2 Carrots, grated
2 ts Oregano or thyme
1 Salt to taste
1 Pepper to taste
1/2 lb Small pasta shells, cooked
Place all ingredients except pasta in a large pot. Cover with cold water to the depth of the 2nd knuckle of your index finger. Cover pot and simmer over low heat until the lentils are tender (about one hour). Taste and correct seasoning. Stir in cooked, drained pasta, and garnish with parsley.

Welcome to back to my channel, we have quite a mix of meals this week. We've all been hit with illness of some sort over the last couple of weeks and I crave soup when I'm unwell. I had cut back on carbs for a couple of weeks, but it was so hard to stick to when feeling unwell. So instead I've made dinners, soups, pasta and feel good food.

Eating in season & epic Autumn Stew - VEGAN
It’s officially stew season and there's nothing like a good, easy stew to give us a warm hug on a cold day. This dish is packed with seasonal veg including apples from Steve’s garden. There are so many benefits to eating seasonal fruit and veg, it’s fresher, tastes better, is super nutritious and will have less air miles so is better for the environment too. We’ve based this stew around butternut squash and potatoes but any root veggies you have to hand will work and the addition of the apple will bring a yummy sweetness to the dish.

Greek Lentil Soup with Lexi and Hunter Pence
Lexi and husband, Hunter Pence, are cooking dinner with you on another quarantine night. Tonight they are cooking Greek Lentil Soup!
Ingredients:
1 lb lentils
2.5 quarts water
2 medium onions, chopped
2 stalks celery, chopped
1 carrot, chopped
6 sprigs parsley, chopped
1 clove garlic, chopped
1/2 cup olive oil
1 TB tomato paste
Bay leaf
Salt to taste
3 tablespoons red wine vinegar
Instructions:
Soak lentils in water overnight. Next day, sauté vegetables and garlic in olive oil and add to lentils along with tomato paste, parsley, and bay leaf. Bring to a boil and simmer until lentils are tender. In the last 15 minutes of cooking add salt. Stir in vinegar before serving. If desired, mix flour and wine vinegar to a paste and add to soup to thicken.
Note: 1/2 teaspoon oregano and 1/2 cup cooked tomatoes may be added just before the soup is thickened.

How to make Chicken Soup
The perfect Chicken Soup for this weather!!!
Ingredients
1 Whole Chicken
2 ½ -3 cups (celery chopped)
2 ½-3 cups carrots (chopped)
1 Spanish onion (chopped)
1 Tbsp fresh Ginger (grated)
1 cup brown rice (washed)
1 Tbsp salt
1 Tbsp Olive oil
Directions
Place chicken in a large pot, cover with water and place over high heat with lid. Let it boil, approx. 13 minutes. When chicken starts to boil, cook for an additional 30 min over med-high heat uncovered. Every 10 minutes, skim off pulp that builds up on top of boiling chicken.
After 30 min. remove chicken and let cool in the refrigerator (this will make it easier to handle later)
Add 8 cups of water to the boiling chicken broth
Add vegetables and 1 Tbsp olive oil and 1 Tbsp salt to water, let boil for 10 min
Add 1 cup brown rice and boil for 15 min
Remove skin from chicken, cut into bite size pieces and place in with vegetables, add 1 Tbsp fresh ginger simmer for 30 min.
