How to Make Easy Maple Syrup Breakfast Muffins | Easy Oatmeal Muffin Recipe with Shannon Anderson
Wanting to know how to make easy maple syrup breakfast muffins - or, simply intrigued by the idea of an eggless breakfast muffin recipe? Then look no further than this video!
I haven't uploaded a recipe in a while, but this easy muffin recipe (no greasing or lining of tins required!) is worth sharing for sure! These hearty maple oatmeal muffins come complete with a maple syrup icing glaze that adds just a touch of sweetness.

INGREDIENTS:
Muffins: 1/4 cup margarine 1/2 cup white granular sugar 1 tsp salt 1 1/2 cups flour 1 tbsp baking powder 3/4 cup rolled oats 1/2 cup milk 1/2 cup maple syrup (or table syrup... Ooo! If you have the blueberry kind, try that! Just thinking outside of the muffin wrapper...)
Glaze: 1 tbsp margarine 1/2 cup icing sugar 1 tbsp maple syrup (maybe a bit more...)
MAPLE SYRUP MUFFINS RECIPE:
Muffins: 1. Soften margarine; blend in sugar and salt. 2. Add flour, sifted with baking powder; blend with a pastry cutter (or a fork) until mixture is crumbly. Mix in oats. 3. Blend milk and syrup together in measuring cup; pour over dry ingredients; stir just enough to moisten. *NOTE: batter will be thick/heavy as these are muffins without eggs. If the batter won't pick up all of the dry ingredients, carefully add a little more milk (a tbsp at a time) to the batter. 4. Drop into ungreased muffin tins and bake at 350 degrees F until tops are turning brown - about 20 minutes for regular-sized muffins, 12 - 15 minutes for mini bite-sized muffins.
Glaze: 5. While muffins are baking, combine glaze ingredients. Spread on muffins when they have come out of the oven and just cooled a bit.

The only problem is we didn't really follow the recipe properly and just chucked all the ingredients in the bowl in one go.
