How To make Strawberry Kiwi Pie
1 cup all-purpose flour
1/8 teaspoon salt
3 tablespoons butter
4 tablespoons ice water
1 teaspoon fresh lemon juice
4 cups peeled, sliced kiwifruit -- (divided)
3/4 cup sugar
2 1/2 tablespoons cornstarch
1/2 cup water
2 tablespoons butter
2 teaspoons lemon juice
2 cups quartered fresh strawberries
Mix together flour and salt in bowl. Cut in butter until mixture resembles coarse crumbs. Mix together ice water and lemon juice. Sprinkle half over flour. Toss with a fork until dry ingredients are moistened. Add more liquid as needed and mix until a dough forms. Knead into a dough ball and flatten into a disk. Cover with plastic wrap. Chill 30 minutes. Roll dough out to an 11 inch circle and fit into a 9-inch pie plate. Fold edges and flute. Prick bottom and sides with tines of fork. Cover and chill 10 minutes. Preheat oven to 425 degrees. Line pastry with foil and weights and bake another 10 minutes or until golden brown. Put 2 cups kiwifruit in saucepan and mash with potato masher. Add sugar and cornstarch and stir well. Add water and stir and bring to a boil. Cook 1 minute, stirring constantly. Add butter and lemon juice. Stir until butter melts and set aside. Place remaining 2 cups kiwifruit into bottom of pie crust. Pour mashed kiwi mixture over all. Smooth edges. Arrange strawberry slices over top in decorative pattern, pressing gently into surface. Chill 3-4 hours

4- Ingredient Kiwi-Strawberry Fruit Leathers
Servings: 10-12
INGREDIENTS
3 cups strawberries, halved
1 cup kiwi, cut into quarters
3 tablespoons sugar
1 tablespoon lemon juice
PREPARATION
1. Preheat oven to 170˚F/70˚C.
2. In a food processor or blender, puree strawberries, kiwi, sugar, and lemon juice.
3. Over a bowl or jug, pour the puree into a strainer and stir to remove most of the seeds.
4. On a baking sheet lined with parchment paper, pour the puree and spread evenly over the paper, being careful not to let it spill over the edges.
5. Bake for 5 hours, or until it is mostly dehydrated and is no longer sticky. (This may take up to 6 hours depending on the oven.) It is done when it has a bendable, leathery texture.
6. Cool completely and cut into strips, leaving the parchment paper attached.
7. Roll each strip up and tie with a ribbon or twine.
8. To serve, remove ribbon/twine and parchment paper.
9. Enjoy!

RECIPE:
1 ½ cups raw cashews (soaked for min 2 hours)
½-¾ cups plant milk
3-4 pitted medjool dates
1 tsp lemon juice
1 tsp vanilla extract
Strawberries and Kiwis to garnish
Nut Crumbs:
½ cup nuts
1 date
Combine all ingredients except for the strawberries in a blender. Blend until smooth. Chill in the refrigerator for 1-2hrs. In a food processor combine nuts and dates and process to a course crumb.
Garnish chilled cups with nut crumbs and fresh strawberries and kiwi
