STUFFED PEPPER SOUP RECIPE:
3 cups of cooked white rice
1 lb. of grass-fed ground beef
1 cup of chopped red bell pepper
1 cup chopped green bell pepper
1 cup diced onion
4 cloves chopped garlic
1 28 oz. can of diced tomatoes
16 oz. tomato sauce
3 cups of reduced sodium chicken broth
2 tsp. Italian seasoning
Salt and pepper to taste
Heat a large pot over a medium heat and add in the ground beef. Season the meat with some salt and pepper and then mix it all together, breaking up the meat with the back of your spoon until you have crumbles.
Once the meat has browned, add in the peppers, onions, and garlic and cook for another 5 minutes or until the veggies have just began to feel tender.
Add in the diced tomatoes, tomato sauce, chicken broth, Italian seasoning and a little more salt and pepper. Turn the heat to high and bring it all to a boil and then reduce it back down to a simmer and cook for 25 minutes.
Scoop into your favorite bowl and top with 1/3 cup of the rice. Serve and enjoy!
Makes 6-8 servings.

Stuffed Pepper Soup

Serves 6-8
(I used a 5.5qt stockpot)
Ingredients:
8 oz tempeh crumbled (227 g) or 1-15 oz can bean/lentil of your choice
4 large bell peppers, chopped (615 g)
1 medium onion, chopped (200 g)
24 oz strained tomatoes (680 g)
14.5 oz diced can of tomatoes (Salt-free) (411 g)
4 cups vegetable broth (946 ml)
1 Tbsp white miso paste
1 ½ tsp poultry seasoning
1 tsp dried parsley
Cooked grain of your choice (rice, farro, bulgur wheat, quinoa – etc)
Directions:
1.) In a large stock pot add all the ingredients and cook on medium-high. Bring
soup to a low simmer and cook until peppers are soft (around 20 minutes).
2.) Add cooked grains into the soup pot or with each individual serving.
The soup freezes great!

STUFFED PEPPER SOUP is the cozy soup recipe you need for Fall!
This easy stuffed pepper soup turns a dinner favorite into an even cozier one-pot meal. It's loaded with ground beef, rice, bell peppers, onion, garlic, tomatoes, and a variety of spices.
It has all the flavors of a classic stuffed peppers recipe, but it has a few perks. It's a one-pot meal, takes a bit less time to cook, and excludes the whole stuffing process. A meal prep winner for sure!
And if you're a big fan of soup season, I can definitely see this being one of those soup recipes you rely on when you don't know what to cook for dinner. It's healthy, hearty, homey, perfectly filling, and will leave everyone completely satisfied.
2 cups cooked rice (for this recipe, I cut the cooking time in half)
1 lb sweet or spicy sausage (I precook mine and keep in freezer for recipes)
2 T olive oil
1 lb ground beef
salt and pepper to taste
1 large green pepper
1 large red pepper
1 large onion
4 cloves garlic
2 cups beef stock
2 15-oz cans petite diced tomatoes (or tomatoes of your choosing)
1 can tomato soup
thyme sprigs
1 T basil
1 T oregano
1-2 t sugar
Add all ingredients as shown in video, except for the rice. Cover and simmer soup on very low heat for about 30 minutes. Add the rice, cover and simmer for an additional 15 minutes. Serve with garlic bread and salad. Check out my delicious, homemade, weeknight salad recipe:

Quick & Easy Stuffed Pepper Soup (Greek Gemista in Soup form)
Get the recipe here:
Ingredients
1 pound (450g) ground beef
3-4 tablespoons olive oil
1 onion, finely chopped
5-6 garlic cloves
2 belle peppers, diced
28 oz (794g) crushed or diced tomatoes
1 teaspoon salt or to taste
1/2 teaspoon freshly cracked black pepper or to taste
a pinch of crushed red pepper flakes
1/2 teaspoon dried dill
2-3 cups chicken or beef broth
1 cup cooked Basmati rice
1 teaspoon dried oregano
feta cheese and olives for serving
Instructions
In a soup pot add the onion and olive oil with a pinch of salt. Cook over medium heat until soft and golden. About 10 minutes.
Add the garlic and warm through for a few seconds until fragrant.
Add the beef and cook until no longer pink.
Add the tomatoes, broth, salt, pepper, dill, crushed red pepper flakes and bring to a boil.
Reduce the heat to medium and cook for 30 minutes. Add the rice and oregano.
Taste and adjust the seasoning if needed and warm through.
Serve with feta, olives, and toasted bread. Kali Orexi!

The ULTIMATE Stuffed Pepper Soup Recipe | Fire Roasted Tomatoes & Peppers
INGREDIENTS:
1 1/2 lbs. ground beef
1 cup diced onions
3 stalks diced celery
2 medium diced carrots
2 cups diced mixed color bell peppers
1/2 to 3/4 cup rinsed and drained white rice
1 cup diced roasted bell peppers
1 - 28oz can fire roasted diced tomatoes
4 cups of beef broth
1 Tbsp. minced garlic
1/4 tsp. salt and to taste
1/4 tsp. black pepper and to taste
1 tsp. parsley
1 1/2 tsp. oregano
2 tsp. basil
sprinkle of garlic powder to taste
In a soup pot on med high heat add ground beef.
Cook and chop until brown and remove from pot.
Leave 3 Tbsp. fat in the pot.
On medium heat add onions, celery, carrots and pinch of salt / black pepper.
Cook and stir for 5 minutes.
Add bell peppers. Cook and stir for 2-3 minutes.
Add minced garlic. Cook and stir for 30 seconds.
Add chopped roasted bell peppers. Cook and stir one minute.
Add fire roasted tomatoes. Stir to combine. Turn up heat to bring to simmer.
Add seasonings and cook one minute.
Add ground beef and broth. Stir, bring up to simmer, cover and cook for 5 minutes.
Add rice and stir. Bring to simmer, cover and cook on low for 20 minutes.
Stir about half way through.
Taste soup. Add seasonings. Cover and simmer for 2 minutes.
Serve and enjoy.
