How To make Sugarless Applesauce Cake
1 c Raisins
1 c Dried fruit
-diced 2 c Water
2 c Flour
1 ts Baking soda
1/2 ts Salt
1/2 ts Nutmeg
1 1/2 ts Cinnamon
2 Egg
-beaten, or equilavent -egg substitute 1 c Unsweetened applesauce
2 tb Liquid sweetener
3/4 c Vegetable oil
1 ts Vanilla extract
1/2 c Chopped nuts
Combine raisins, fruit and water in a saucepan; cook, uncovered, until water is evaporated and fruit is soft. Set aside to cool. Meanwhile, in a large mixing bowl, combine flour, baking soda, salt, nutmeg and cinnamon. In another bowl, combine eggs, applesauce, sweetener, oil and vanilla. Add nuts and reserved fruit mixture. Stir into dry ingredients and blend thoroughly. Pour into a greased 10" fluted tube pan (Bundt). Bake at 350 degrees F for 35 - 40 minutes or until the cake tests done. Makes 32 servings. Nutritional information per serving (prepared with egg substitutes): calories - 125, protein - 2 gm., fat ~ 7 gm. carbohydrates - 15 gm., cholesterol - 0 mg., sodium - 60 mg. Hello everyone!
My Applesauce Cake is a family favorite. The recipe is simple to make and tastes delicious. I hope you make a loaf or 2 for your family.

Applesauce Cake
3- No Sugar Added or Unsweetened Applesauce snack cups
1/2 C. Softened Salted or Unsalted Butter (1 stick)
1/2 C. Light Brown Sugar
1/2 C. Granulated Sugar
1 Egg at Room Temperature
*2 C. Unbleached All-Purpose Flour (if batter is very thin, add 2 T. more flour)
1 t. Baking Soda
1/2 t. Baking Powder
1/2 t. Salt
1 t. Cinnamon
1/2 t. Nutmeg
1/2 t. Cloves
Optional:
1 C. Raisins
OR
1 C. Chopped Pecans
Bake @350 degrees in a 9x5 Greased Loaf Pan for 50-60 minutes or until tester comes out clean, do not overbake.
Garnish with powder sugar.

Applesauce Cake (revised)
2 cups sifted flour
1 cup unsweetened applesauce
1/2 c sugar
1/2 c stevia in the raw
1 tsp ginger
1 tbsp cinnamon
1/2 tsp nutmeg
1 cup toasted walnuts
1/2 tsp salt
2 tsp baking powder
1/2 tsp soda
1 egg beaten
Oven: 350 degrees
Cream butter, sugars and spices together. Add beaten eggs, and then the applesauce. Sift other dry ingredients together and add to sugar mixture. Add toasted walnuts. Beat well. Batter will be thick. Pour into greased and floured Bundt pan.
Bake 30-35 minutes
