How To make Sugarless Applesauce Cake
1 c Raisins
1 c Dried fruit
-diced 2 c Water
2 c Flour
1 ts Baking soda
1/2 ts Salt
1/2 ts Nutmeg
1 1/2 ts Cinnamon
2 Egg
-beaten, or equilavent -egg substitute 1 c Unsweetened applesauce
2 tb Liquid sweetener
3/4 c Vegetable oil
1 ts Vanilla extract
1/2 c Chopped nuts
Combine raisins, fruit and water in a saucepan; cook, uncovered, until water is evaporated and fruit is soft. Set aside to cool. Meanwhile, in a large mixing bowl, combine flour, baking soda, salt, nutmeg and cinnamon. In another bowl, combine eggs, applesauce, sweetener, oil and vanilla. Add nuts and reserved fruit mixture. Stir into dry ingredients and blend thoroughly. Pour into a greased 10" fluted tube pan (Bundt). Bake at 350 degrees F for 35 - 40 minutes or until the cake tests done. Makes 32 servings. Nutritional information per serving (prepared with egg substitutes): calories - 125, protein - 2 gm., fat ~ 7 gm. carbohydrates - 15 gm., cholesterol - 0 mg., sodium - 60 mg. Applesauce Cake (revised)
2 cups sifted flour
1 cup unsweetened applesauce
1/2 c sugar
1/2 c stevia in the raw
1 tsp ginger
1 tbsp cinnamon
1/2 tsp nutmeg
1 cup toasted walnuts
1/2 tsp salt
2 tsp baking powder
1/2 tsp soda
1 egg beaten
Oven: 350 degrees
Cream butter, sugars and spices together. Add beaten eggs, and then the applesauce. Sift other dry ingredients together and add to sugar mixture. Add toasted walnuts. Beat well. Batter will be thick. Pour into greased and floured Bundt pan.
Bake 30-35 minutes

Sugar-free Applesauce Cake
1 1/2 Cup all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
1/2 teaspoon ground cardamon
1/2 cup (1 stick) unsalted butter room temperature
1 1/4 Lite&Sweet™
2 eggs
1 cup unsweetened applesauce
Directions
Preheat oven to 350 degrees. In large bowl whisk together flour, baking soda, salt, cinnamon and cardamom. Set aside.
In another bowl using an electric mixer, beat butter and Lite&Sweet™ until light and fluffy. Add eggs, one at the time beating until combined. With mixer on low speed, gradually add the flour mixture; beat until combined. Lastly beat in the applesauce.
Bake for 50 to 60 minutes until toothpick comes out clean. Dust with Sugar-free Lite&Sweet™ before serving, if desired.
Sugar-Free Apple Butter
2 tablespoons unsalted butter
3 pounds assorted apples, peeled, cored, and cut into quarters
3 cups apple cider
1/4 cup Lite&Sweet™
Juice of 1/2 lemon
1 teaspoon lemon zest
1/2 teaspoon ground cinnamon
Directions
In a large heavy sauce pan over medium heat melt the butter and add the apples. Cook apples until slightly softened about 5 minutes. Add cider and Lite&Sweet™, bring to a boil and reduce heat to simmer partially covered stirring occasionally until soft for 30 minutes.
Preheat oven to 250 degrees and mash softened apples with potato masher. Remove from heat and add lemon juice, lemon zest, and cinnamon. Puree mixture in a blender until smooth.
Pour mixture into baking dish and bake stirring occasionally until thickened for 3 1/2 hours.
Allow to cool before serving.
Apple butter can be kept in airtight container for 2 weeks.

2 eggs
3 tbsp sunflower oil
Brown Sugar Mix:
150 g brown sugar
3 tsp cinnamon
6 tbsp sunflower oil or 120 g melted butter
Glaze:
200 g icing sugar
70 ml milk
9'' X 13'' (23-CM X 33-CM) PAN
Preheat the oven to 200°C (392°F) and bake for 30-40 mins, but keep an eye on it.
Test with a toothpick for doneness!
NOTE: You can adjust the quantity of sugar to suit your taste. Feel free to use less sugar if you prefer a less sweet cake.Enjoy! ????????

Unsweetened Apple Sauce
This is a really simple and quick to make applesauce recipe. I love using applesauce in baking. I mainly use it to make spiced applesauce muffins which are a delight. Let me know if you want the recipe! They are whole wheat and SO yummy. You can use this applesauce however you like and it can also be served as it is. It tastes SO good even without any added sugar and it is super healthy ;)
