How To make Sun Dried Tomato Cheesecake Squares
CRUST:
1 1/4 c Flour
6 tb Butter; chilled*
1 lg Egg
FILLING:
1/2 c Oil-pkd sun-dried tomatoes*
6 Cloves garlic
2 ts Chopped fresh oregano
3 Large eggs
16 oz Cream cheese; room temp*
1 c Sour cream
1/2 c Green onion, finely chopped
*Note: Butter and cream cheese should be cut into bits. Sun-dried tomatoes should be drained, but reserve 1 T oil. Preheat oven to 350^. Make crust - blend flour and butter until mix resembles coarse crumbs. Add egg and blend just until dough begins to clump. Press onto bottom of 13x9" baking dish (dough will be thin). Bake about 10 minutes, until light golden. Cool. FILLING: in processor, finely chop tomatoes with reserved oil, garlic and oregano. Blend in eggs. Add cream cheese and blend until smooth. Add sour cream and blend until combined. Transfer filling to bowl and mix in chopped green onion. Season to taste with salt & pepper. Pour filling into crust and bake until filling puffs & is light brown, about 20 minutes. Cool to room temp and cut into squares. Source: Dec. '91 Bon Appetit magazine. Sun-dried Tomato Cheesy Scones | Italian and homemade
Enjoy for breakfast, with your favorite omelette, or a simple smear of butter, jam and clotted cream. These are so versatile, also enjoy for lunch or dinner, with crispy chicken and a salad.

Sun-dried Tomato Cheesy Scones
Ingredients
2 ½ cups all-purpose flour
2 Tbs Sugar
2 ½ tsp baking powder
½ tsp baking soda
1 stick butter cut into small pieces
1 egg
1 cup cream
1 cup grated cheddar cheese
¼ cup sundried tomatoes chopped
Instructions
Preheat oven to 375 degrees F
In a large bowl combine flour, sugar, baking powder, and baking soda. Add butter and mix until mixture is crumbly by crisscrossing two knives or using a pastry cutter. In a small bowl, whisk egg and add into flour mixture with cream and mix gently. Mix in cheese (same a little to top scones) and sundried tomatoes. Knead gently to incorporate all ingredients. Form into a large circle or square about 1 inch thick, cut into desired shape with circle or square cutters, or form into a large circle and cut into triangles. Brush with cream and top with cheese. Bake for 18 to 20 minutes until lightly browned.
Notes
These can be frozen, unbaked, or baked.
They will also be perfect dipped in our Perfect marinara sauce.

Sundried Tomato and Olive Cream Cheese Spread
- 1 bar cream cheese (softened)
- 2 tbsp chopped black olives
- 2 tbsp chopped sundried tomatoes
- Lemon zest
- Lemon Juice (optional)
- Drizzle of honey
- Salt and Pepper
