On the auspicious occasion of Gudhi Padwa, a popular festival which marks the new year of Maharashtrians our chef Archana Arte shows you how to make Kesar Bhaat / Sweet Saffron Rice only on Tasty Safar.
Kesari Bhaat / Kesari Bath is a tasty sweet saffron flavored rice which is very easy and quick to make during any special occasion.

Ingredients:
2 tbsp Ghee
2 Cups Kolam Rice (washed & drained)
Cashews & Raisins (as required)
3 Cloves
4 Cups Water
2 pinches Saffron strands
1 Cup Sugar
Method:
- In a pan heat some ghee.
- Add cashews and raisins. Then add cloves. Give a stir for few seconds.
- Then add rice and mix well.
- Add water and saffron strands. Give a stir. Cover it and let the rice cook for 15-20 minutes.
- After the rice is partially cooked add sugar. Mix well.
- Again cover it and let the rice cook for 15-20 minutes on low flame.
- Kesari Bhaat is ready to be served.

GHEE - 2 TBSP,
RAISINS - 1TBSP,
CLOVES - 20,
CASHEWS,
CARDAMOM POWDER - 1TSP,
SUGAR - 1CUP,
KESAR COLOUR (OPTIONAL)
METHOD
*MAKE COARSE POWDER OF CLOVES AND KEEP A SIDE
*ADD CUP OF SUGAR AND SMALL GLASS OF WATER INTO KADAI
*MELT AND BOIL THE SUGAR INTO ONE STRING CONSISTENCY
*ADD CLOVES POWDER, CLOVES AND CARDAMOM POWDER INTO SUGAR SYRUP AND MIX IT
*ADD KESAR COLOUR (OPTIONAL) INTO SYRUP
*ADD COOKED BASMATI RICE INTO SUGAR SYRUP AND MIX WELL
*KEEP IT ON LOW FLAME AND MIX (AVOID BURNING THE FOOD)
*AFTER 5 MINS ADD GHEE OF 2 TBSP AND MIX WELL
*GHEE ROAST CASHEWS AND RAISINS
*AFTER ROASTING DRY FRUITS KEEP A SIDE
*TRANSFER COOKED RICE INTO SERVING BOWL
*TOP UP WITH DRY FRUITS , ADD A SPOON OF GHEE ON TOP OF IT

Kesaribhath is a traditional sweet, which is very simple, but tasty. There are 2 types of Kesaribhaths- rice Kesaribhath and rava Kesaribhath. In today's video, rice Kesaribhath is presented in a simple way. Ingredients required also few, but saffrons are very important for flavor. Rice, ghee and sugar also main ingredients. Other ingredients are milk and dry fruits. Follow all the tips given in the video to make a perfect rice Kesaribhath.

Gandhasale rice or any white rice 1 cup
Ghee 3/4 cup
Sugar 3 cup
Kesar (safron) 3/4 grams
Milk 3/4 cup

Ingredients
Golden Cella Rice - 1 Cup (200 grams)
Sugar 3/4 Cup (150 grams)
Almomd - 1/4 cup
Cashews -0 1/4 Cup
Raisin - 1/4 cup
Clove - 4
Dry Coconut - 1//4 cup, chopped
Ghee - 5-6 tbsp
Green Cardamom - 6
Orange Food Colour - 1/3 tsp
Saffron - 30-35 strand
Milk - 1/2 cup
Direction:
Getting Ready:
1. Take 1 cup golden sella rice. Soak it in lukewarm water for an hour then use it.
2. Take 1/4 tsp orange red food color in a small bowl mix with little water.
3. Take 1/4 cup cashews , 1/4 cup almonds, cut a few in halves and few in thin slices.Take 6 small cardamoms,peel them.
4. Take 1/2 cup milk, add 20 to 25 saffron strands.
Making:
3. Take a vessel filled with water. Add almost 1 litle water in the vessel. Turn on the flame.
4. Add food color to the water in vessel.Cover the vessel and let the water boil. Once the water boils, take out the rice from the bowl and add it to the boiling water.Cover the vessel.Check the rice after 5 minutes,keep it 80 - 90 % cooked.
5. Stir the rice at regular intervals,check if it is cooked well. Press and check one grain of rice. When rice is 80% cooked, turn of flame. Strain the rice from the water.We have place strainer over a bowl, then pour the rice over it.Rice is cooked in 15 minutes.
6. Take a heavy based vessel or wok. Turn on flame and let it heat. Add ghee, then add dry fruits, 1/4 cup coconut julienne, add 1/4 cup cashews, 1/4 cup chopped almonds. Roast it slightly and reduce flame. When the dry fruits are slightly roasted Take out a bit of dry fruits,to use later for garnishing.
7. Then add cardamom seeds, 4 cloves. Slightly roast it. Add rice to it, then add 3/4 cup sugar and saffron milk to it.Mix it well. Now cover and cook the rice on very low flame for 10 to 12 minutes. Then turn off flame.Cover and keep the pulao for 10 minutes then serve it.
Serving:
8. Yummy and aromatic pulao is ready, Take it out in a bowl. Garnish the pulao with some dry fruits. You can store Zarda pulao and relish it for 3 days.
