Ladies fingers is a very versatile vegetable. The MANDI preparation is a unique and tasty way to cook ladies fingers. The addition of black-eyed beans boosts the protein level.
Heat 1/2 tsp oil and stir in the lady's finger until sliminess is no more. Set it aside. Heat oil in a pan and temper in the spices. Then add in the green chilli , garlic, onions, curry leaves, Stir fry until the onions are browned. Add in the tomatoes and stir until soft. Then add in the turmeric and cumin powder. Stir in the lady's finger. Add 2 tsp of rice flour into the tamarind pulp with 1 cup of water and extract the juice. Add the tamarind extract ( 1 cup ) to the lady's finger. Add in the pre-cooked black-eyed beans. Then add salt to taste. Let it simmer for about 10 - 15 mins until the vegetable is well combined with the other ingredients. Ready to serve . Best eaten as a side dish with rice and chicken or mutton curry. Enjoy It !!!
