Ingredients:-
Vegetables cut into juliennes:-
5-6 French Beans
1 medium sized carrots
¼ cup Bean sprouts
1 cup Green Cabbage
1 cup Button mushrooms
1 small Green Capsicum
2 tbsp. Vegetable Oil
3 tbsp. Spring onions, chopped
2 tbsp. Ginger Garlic Green chilli crushed
6 tbsp. Dark soy sauce
4 tbsp. Red chilli sauce
5 tbsp. Vinegar
4 cups Water or Vegetable stock
Salt to taste
¼ tsp. Sugar
½ tsp. Black Pepper powder
3 tbsp. Cornflour
¼ cup Spring greens finely chopped
5 tbsp. Red Chilli
Oil
Method:-
- In a wok heat oil till it starts smoking and add crushed ginger-garlic-green chilli and the sliced vegetables.
- Toss and stir fry on high flame.
- Add water/vegetable stock and boil on high flame for 2-3 minutes.
- Once boiled, add dark soy sauce, white vinegar, red chilli sauce and mix well.
- Now add salt, sugar, black pepper and stir.
- Then add the mushrooms and bean sprouts and do not mix.
- Mix corn flour with cold water until no lumps are seen and add it to the boiling soup.
- Stir and add spring greens and red chilli oil.
Serve piping hot garnished with red chilli oil and spring onions! HAPPY COOKING!!!

Recipe - Super Delicious and Healthy Sweet and Sour Adzuki Beans (Vegan or Vegetarian)
This is nothing like the Asian sweet adzuki bean soup that is everywhere on YouTube. It has more of a Moroccan feel to it.
It is a very delicious dish that can be made with almost any other bean or lentil, too. It's really good eaten over rice, quinoa or with a nice hearty bread--of course, you can eat it on its own, as well.
Tip:
When cooking beans or other pulses, do not add salt until near the end of the cooking process, when beans are almost fully softened (approximately 15 minutes before); otherwise, the beans remain hard for a much longer time. Happy cooking!
Sweet and Sour Adzuki Bean Recipe
250g (1 cup) dried adzuki beans, soaked overnight
1 large sweet onion, chopped
2 garlic cloves
2 knobs of fresh ginger root (about 2 T. grated)
¼ cup Thompson raisins
2 large peppers (one red, one yellow, or 2 of the same), roasted,
seeded, peeled and chopped
2 T. red palm oil (or unsalted butter)
1 T. extra-virgin olive oil (or other oil)
2 T. tomato paste
2 T. garam masala
1 tsp. turmeric powder
¼ cup sake (or dry white wine or sherry)
2 T. maple syrup (or honey)
¼ cup apple cider vinegar
sea salt, to taste
6 cups water, boiled
¼ cup fresh cilantro, chopped (optional, but awesome)
sesame oil (optional, but awesome)
1. Heat the oil (or butter) slightly in a 4-6 quart heavy saucepan.
2. Add onion, and grate in garlic and ginger.
3. Sauté on medium heat, stirring occasionally, until caramelized.
4. Stir in tomato paste and cook for about 2 minutes, stirring often.
5. Stir in garam masala and turmeric.
6. Stir in sake, deglazing the saucepan.
7. Stir in maple syrup and raisins.
8. Stir in adzukis, let them take in the flavours for about 3 minutes,
stirring often.
9. Stir in water and simmer for 1 hour, stirring occasionally.
10. Add water, if needed while simmering, maintaining about 1 cup of
water in saucepan at all times.
11. Stir in apple cider vinegar, peppers and sea salt to taste.
12. Simmer 30 minutes more or until adzukis are cooked through (add
water if needed).
13. Serve over white or brown rice, quinoa, or with a hearty bread.
14. Garnish with fresh cilantro, and drizzle with sesame oil, if desired.

500 g sour cabbage
