How to make Spicy Szechuan Prawns
10 - large prawns, shelled, deveined with tails intact.
oil for stir frying
1 tbsp Szechuan peppercorn (Slightly crushed)
2 tbsp - chopped garlic.
2 tbsp / Ginger
Garnish - Chilli & coriander
1 - medium tomatoes diced
Mix everything below to make Szechuan Sauce Mixture:
2 tbsp - Tomato paste.
1 tbsp - Fermented soybean chilli paste.
t tbsp. lime juice
1.5 tbsp - soya sauce.
1 tsp - sugar.
1 tsp - Salt & pepper to taste
1 tsp sesame oil (Optional)
To make prawns:
Heat a pan with oil, sauté ginger, garlic & Szechuan peppercorn 15 seconds, add prawn stir fry for 1-2 min. Add Szechuan sauce mixture stir fry for another 1 minutes. Garnish, serve with white rice

✅Ingredients
• 1/4 cup water
• 1 1/2 tablespoons soy sauce
• 1 1/2 tablespoons Asian chili garlic sauce
• 1 tablespoon freshly minced ginger
• 2-3 cloves crushed garlic
• 1/2 teaspoon crushed red pepper flakes
• 2 teaspoons cornstarch
• 1 teaspoon honey
• 1 tablespoon vegetable or canola oil
• 2 cups frozen broccoli florets, thawed
• 1 pound jumbo shrimp, peeled and deveined
• 1/4 cup sliced green onions
✅Instructions
1️⃣ 00:17 - In a small mixing bowl, whisk together water, soy sauce, chili garlic sauce, ginger, garlic, red pepper flakes, honey, and cornstarch.
2️⃣ 01:21 - Heat a wok or large skillet over high heat. Pour in cooking oil and add in broccoli and shrimp. Pour sauce over.
3️⃣ 01:48 - Toss and allow shrimp to cook until it turns pink. Turn off heat and stir in green onions. Serve hot.

Ribbon Noodles:
Garlic Chili Oil Noodles:
4 cloves of minced garlic
thumb size knob of ginger, minced
½ a shallot, minced.
2 tbsp of soy sauce
1 tbsp of black vinegar
1 tsp of sugar
½ tsp of salt
korean chili flakes or Gochugaru
¼ cup of avocado oil
Ruffled wheat noodles
shredded cucumbers
sesame seeds
Miso Carbonara:
2 eggs
1 tbsp of yellow miso
½ cup grated pecorino
½ tsp of black pepper
bacon
garlic cloves
salt and cook spaghetti until just al dente.
½ cup of the pasta water
pinch of black pepper
Broccoli Beef Stir-Fry
¼ cup soy sauce
2 tbsp oyster sauce
1 tbsp brown sugar
2 tsp sesame oil
2 tsp rice vinegar
½ tsp black pepper

1 tbsp cornstarch

Ingredients for Chilli Prawns:
(Tsp-Teaspoon; Tbsp-Tablespoon)
- Prawns/Shrimp - 500 gms (250-300 gms. net after shelling & deveining)
1st Marinade:
- Salt- 1/2 tsp
- Turmeric Powder- 1/4 tsp
2nd Marinade/Batter:
- All Purpose Flour- 2 tbsp
- Cornflour- 2.5 tbsp
- Ginger Garlic paste- 1/2 tsp
- Pepper Powder- 3/4 tsp
- Soy Sauce- 1/2 tsp
- Egg, whisked- 1
Tempering:
- Garlic chopped- 3 tsp
- Ginger chopped- 1 tsp
- Whole Dried Red Chillies- 3-4
- Green Chillies sliced- 3
- Spring Onion whites, chopped- 3( 2 tbsp)
Sauces:
- Dark Soy Sauce- 2 tsp
- Red Chilli Sauce- 2 tbsp
- White Vinegar-1 tsp
Other Ingredients:
- Onion petals- 1 small onion (50 gms)
- Green Peppers (Capsicum), cubed - 1 cup
- Red Peppers, cubed- 1 cup
- Spring Onion greens, chopped- 3 (3 tbsp)
- Salt- pinch, for seasoning
- Pepper Powder- pinch, for seasoning
- Oil- 1.5 tbsp and oil for deep frying
- Corn slurry- 2 tsp corn flour mixed in 2 tbsp water
Preparation:
- Clean, shell and devein the prawns, wash and pat dry.
- Marinate with 1/2 tsp salt and a 1/4 tsp of turmeric powder. Set aside for 15 mins.
- Peel and chop the garlic and ginger, slice the green chillies. Take out onion petals or cut into cubes.
- Cut the green and red peppers into cubes.
- Chop the spring onion whites and greens separately and set aside.
- Now add all the ingredients for the batter to the marinated prawns and mix it well to coat the prawns well. Set aside for 5 mins while heating the oil for deep frying the battered prawns.
- Once the oil is medium hot, add the battered prawns one by one in hot oil and fry for around 2-3 mins till golden. Fry in batches if required.
- Strain and keep it on a plate. Repeat for the balance.
Process:
- Take a wok/kadai and heat 1.5 tbsp of oil.
- Add the chopped garlic & ginger and give a stir for 15 secs.
- Now add the whole red chillies & sliced green chillies and give a stir for 15 secs.
- Now add the spring onion whites. Give a stir for 15 secs.
- Add the onion petals, cubed green and red peppers. Add salt and pepper powder to season.
- Mix and sauté on high heat for 1 min.
- Now add the fried prawns, mix and keep sautéing on high heat for another 30 secs.
- Now pour in the sauces and mix it well to coat the fried prawns. Stir fry for 1 min and then add the cornflour slurry. Mix and stir fry on high heat for 1 min till it dries up and coats the fried prawns.
- Add some chopped spring onion greens, mix and serve hot.
