Simple Guacamole Recipe | Teri Gentes

Spend a few minutes in the kitchen with Teri Gentes, a whole-self nutrition coach, culinary chef, and author, while she makes us a simple guacamole recipe. Teri always focuses on food that’s fun, flavorful, and fused with quality nutrition. Guacamole does all of this on its own, without needing anything special added. It’s that good!
You start by picking the best avocados. You want fairly ripe for guacamole. You can tell by the firmness or by picking off the stem and looking at the coloring. They should give slightly when you squeeze them, yielding to firm, gentle pressure. If you pick off the stem, you want to see a yellow-green color underneath. Really green means it’s unripe and brown or black means it’s too ripe. Don’t be afraid to handle those avocados before you buy them. You want only the best!
Cut them open. Now you get to see how well you picked. Remove the pit, and slice it up while still in the shell into cubes. Then you can gently squeeze these chunks out or scoop them out with a spoon. You may want to peel the avocados if you’re doing anything besides guacamole, but, for this recipe, no need to be so gentle.
Add in the finely diced red onions, garlic, tomatoes, and jalapeno. Any hot pepper will work though, so choose your favorites. You’ll also want to add a little lemon or lime juice. Teri favors lime for guacamole. Season it with sea salt, cumin, and cilantro. Mix it all up. If your avocados were ripe to begin with, a little fork action is all it takes to make it perfect. Taste and re-season with salt, cumin, peppers, or lime juice, depending on your personal preferences. That’s all it takes. Dish it up, dip in the organic chips, and enjoy. You can also use red cabbage for a raw chip option.

Hilarious culinary artist, raw food chef, TV personality, and maker of awesome things, Jason Wrobel, comes at you from his kitchen to share a deliciously easy white gazpacho. That’s a chilled soup for those of you not in the know. It doesn’t have to be made with tomatoes either, like many gazpacho recipes out there. J-Wro reaches for cauliflower instead.
Start with a blender. Add in organic extra virgin olive oil, apple cider vinegar, a couple cloves of garlic, diced shallot, raw pine nuts, Persian cucumber, sea salt, ground black pepper, and your steamed cauliflower, of course. To pump up the protein of your chilled soup, you’ll want some Sunwarrior Warrior Blend. Use the natural flavor, and it won’t affect the flavor of your recipe much at all.
Blend away. Just thirty seconds or so later, you have your delicious soup. Plate it up in a swanky bowl with a garnish of cucumber, gluten free croutons, and a sprinkling of pine nuts. It’s smooth, refreshing, light, and very good for you all at the same time. Enjoy it, and share with your friends.

My Favourite Homemade Turkey Soup - I'm using my Grandmother's recipe.
Turn your leftover turkey carcass into an amazing homemade soup. Teri's favourite soup is found in her Grandmother's Cookbook. Watch her step by step instructions to make this simple, delicious soup. This turkey soup is perfect served on those cold winter months.

INGREDIENTS
Turkey Carcass, broken up
18 cups Water
4 tsp (20 g) salt
2 chicken bouillon cubes
1 cup (225 g) carrots, grated
1 cup (225 g) celery, chopped
1 cup (215 g) onion, chopped
1 can (796 ml) chopped tomatoes
4 tbsp (60 gr) pot (pearl) barley
2 tbsp (30 gr) rice
1/4 cup (15 gr) parsley flakes
turkey removed from above turkey carcass
macaroni or noodles (optional)
In a large pot, place broken turkey carcass and bones in 18 cups of water. Add salt. Simmer 5 hours. Strain and discard bones. Heat broth and chicken in a large pot. Add remaining ingredients and simmer 2 to 3 hrs.

3 lbs beef thinly sliced, I used ribeys
1 Asian pear (or 1 apple)
4 small carrots, thinly sliced
2 small onions, sliced
8 stalks of scallion, cut 1 inch wide
9 TBSP low sodium soy sauce
4.5 TBSP water
3 TBSP honey
3 TBSP brown sugar
3 TBSP sesame oil
3 TBSP mirin
1 bulb minced garlic
1 tsp black pepper
1. Combine all of your ingredients and let it sit for at least 10 mins— overnight for best results.
2. Then cook on a skillet on high heat for 2 minutes untouched. Mixed. Cook for another minutes untouched until cooked through or until there is a nice sear.
3. Enjoy with rice and preferred side dishes
