How To make Tex Mex Chili Meatballs with Zesty Tomato Sal
3 tb Vegetable oil
1 sm Onion,diced,about 1/2 cup
1/2 ts Chili powder
1 lb Lean ground beef
1 lg Egg
1 cn (4 oz) mild green chilies,
Drained and chopped 1 3/4 c Fresh bread crumbs, about 4
Slices bread 1/3 c Shredded Monterey Jack
Cheese 1/3 c Shredded mild Cheddar
Cheese 3/4 ts Salt
6 Corn tortillas, half 10 oz.
Pkg., cut into wedges 1 Zesty Tomato Salsa
Lettuce leaves, optional Tomato wedges, optional
ZESTY TOMATO SALSA:
1 tb Vegetable oil
1 Red pepper, cored, seeded
And diced (about 2 cups) 1 Green bell pepper, cored,
Seeded and diced (about 2 Cups) 1 md Onion, diced (about 3/4 cup)
1 lg Clove garlic,crushed
2 lg Ripe tomatoes, diced (about
2 cups)
1/2 ts Hot red pepper sauce
Heat the oven to 400 degrees.In 12" skillet,over medium high heat, heat 1 tbsp. vegetable oil;add onion and chili powder;cook about 10 minutes,stirring frequently,until onion is tender and coated with chili powder.Remove onion to large bowl;wipe skillet clean.To bowl with onion,add beef,egg,chilies,bread crumbs,1 tbsp. of each of cheeses and salt;using hands or wooden spoon,blend well.Shape mixture into 1 1/4" balls.In skillet over medium-high heat,heat remaining 2 tbsp. oil;add meat mixture;cook 15 minutes,turning
frequently,until well browned on all sides and cooked through.Meanwhile,place tortilla chips in single layer on jelly-roll pan;bake 10 minutes until crisp and golden.Prepare Zesty Tomato Salsa.To serve:Spoon meatballs into center of large serving platter;sprinkle with remaining Monterey Jack and Cheddar cheese.Arrange tomato wedges and lettuce around meatballs if desired.Serve with tortilla chips and salsa.Makes 4 servings. ZESTY TOMATO SALSA: In a 2 qt. saucepan over medium high heat,heat 1 tbsp.vegetable oil; add 1 each red and green bell pepper,cored,seeded and diced (about 2 cups),1 medium size onion,diced (about 3/4 cup) and 1 large clove garlic,crushed. Cook about 10 minutes,stirring frequently,until tender.Stir in 2 large fresh,ripe tomatoes,diced (about 2 cups) and 1/4 to 1/2 tsp. hot red pepper sauce;cook 1 minute longer until heated through. Makes about 1 1/2 cups. -----

Simple, Perfect Chili

Ingredients
2 pounds ground beef
2 cloves garlic, chopped
One 8-ounce can tomato sauce
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon ground oregano
1 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 cup masa harina
One 15-ounce can kidney beans, drained and rinsed
One 15-ounce can pinto beans, drained and rinsed
Shredded Cheddar, for serving
Chopped onions, for serving
Tortilla chips, for serving
Lime wedges, for serving
Directions
Place the ground beef in a large pot and throw in the garlic. Cook over medium heat until browned. Drain off the excess fat, and then pour in the tomato sauce, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover, and then reduce the heat to low. Simmer for 1 hour, stirring occasionally. If the mixture becomes overly dry, add 1/2 cup water at a time as needed.
After an hour, place the masa harina in a small bowl. Add 1/2 cup water and stir together with a fork. Dump the masa mixture into the chili. Stir together well, and then taste and adjust the seasonings. Add more masa paste and/or water to get the chili to your preferred consistency, or to add more corn flavor. Add the beans and simmer for 10 minutes. Serve with shredded Cheddar, chopped onions, tortilla chips and lime wedges.

1/4 cup breadcrumbs
1/4 cup grated parmesan cheese
2 Tbs minced dried onion
1 tsp garlic powder
3/4 teaspoon kosher salt

1 tablespoon canola oil
1 medium yellow onion, diced
1 pound ground beef

MEATBALL RECIPE
500g Beef mince
400g Pork sausage meat
2 Cloves garlic
1/2 Teaspoon (1.75g) garlic powder
1 Small onion
8g Fresh parsley
2 Medium eggs
1 Tablespoon worcestershire sauce
1 Teaspoon (3.5g) Italian seasoning
1/4 Teaspoon (0.5g) black pepper
1/2 Teaspoon (1g) salt
1/2 Cup (45g) grated Parmesan
1 Cup (125g) breadcrumbs
Milk (just enough to soak the breadcrumbs)
MEATBALL METHOD
In a large bowl combine all of the beef, sausage meat, parmesan, soaked bread crumbs, grated onion, eggs, garlic (powder and chopped garlic), parsley, salt, pepper, Italian seasoning & worcestershire sauce. Mix together until fully combined.
Once everything is mixed make meatballs out of your mixture, the size of your meatballs is up to you. Heat oil in a saucepan on a medium heat and fry your meatballs until they are golden brown on all sides. Remove from the pan and keep to the side to be placed in your sauce once its made.
SPICY TOMATO SAUCE RECIPE
2 Tablespoons (4g) fresh basil
2 Cloves garlic
1 Small onion
2 Teaspoons (4g) fresh parsley
335g Chopped fresh tomatoes
1 & 1/2 Cups (300ml) chicken stock
500g tomato puree
1/2 teaspoon (1g) chilli flakes
1/4 teaspoon (0.5g) both salt and black pepper
SPICY TOMATO SAUCE METHOD
Heat 1 teaspoon oil in a pan on a medium heat. Add the finely chopped onion & saute for 5 minutes until the onions are soft and have a slight colour to them (do not burn them). Add the finely chopped garlic and cook for 30 seconds.
Add your chopped fresh tomatoes and cook until they have begun to break down and go soft. Add in your tomato puree, chicken stock, all of your herbs, chilli flakes, salt & pepper. Simmer on a slightly lower heat for approx 20 minutes. If you want a very smooth sauce you can put the sauce into a blender once it has cooled down.
Add the meatballs to your sauce and cover them in the sauce. Cover the dish and allow to simmer in a low heat for around 30 minutes make sure you stir now and then. Then you are ready to enjoy the most delicious meatballs.
