Recipe
2 tablespoons cooking oil
1 pound sirloin steak, cut into bite-sized pieces
1 pound lean ground beef
9 ounces pork chorizo, casing removed
1 onion, chopped
1/4 cup chili powder
1 tablespoon garlic powder
1 can (28 ounces) peeled tomatoes, crushed or diced
1 can (4.5 ounces) diced green chilies
28 ounces beef broth
1 cinnamon stick
3 bay leaves
1 tablespoon yellow cornmeal
Salt and pepper to taste
Optional Garnishes:
Shredded cheddar cheese
Sour cream
Chopped green onions
Fresh cilantro leaves
Instructions:
In a large pot or Dutch oven, heat the cooking oil over medium-high heat.
Add the sirloin steak pieces to the pot and season with salt and pepper. Cook until the meat is browned on all sides. Remove the steak from the pot and set it aside.
In the same pot, add the lean ground beef and pork chorizo. Cook until the meats are fully browned and cooked through, breaking them apart with a spoon as they cook.
Once the meats are cooked, add the chopped onion and sauté until it becomes translucent.
Sprinkle the chili powder and garlic powder over the meat mixture. Stir well to coat the meats evenly with the spices.
Pour in the crushed or diced peeled tomatoes and beef broth, stirring everything together.
Add the diced green chilies, cinnamon stick, and bay leaves to the pot, stirring to combine all the flavors.
Reduce the heat to low and let the chili simmer, partially covered, for about 1 hour. Stir occasionally to prevent sticking.
After an hour of simmering, remove the cinnamon stick and bay leaves from the pot.
In a small bowl, mix the yellow cornmeal with a little water to create a slurry. Stir the slurry into the chili to thicken the sauce slightly. Simmer for an additional 10 minutes.
Taste the chili and adjust the seasoning with salt and pepper as needed.
Ladle the Spicy & Savory Meat Trio Chili into bowls, and garnish with shredded cheddar cheese, sour cream, chopped green onions, and fresh cilantro leaves, if desired.
Serve hot and enjoy this flavor-packed chili with your favorite sides or cornbread.
Notes:
For an extra kick, you can add a pinch of cayenne pepper or a splash of hot sauce.
This chili tastes even better the next day, so consider making it ahead of time and reheating for serving.
Store any leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for longer storage.

They say that a good steak doesn’t need to be seasoned with anything more than a sprinkle of salt. That sounds great, and I won’t argue, but sometimes you just want a little extra something, and here that little something is the same spice blend found in a bowl of chili. Enjoy!

Slow Cooker Beef Chili Colorado
2 pounds Certified Angus Beef ® English Roast (chuck shoulder clod), cut into 1-inch cubes
3 dried ancho chilies, stems and seeds removed, torn into pieces
3 dried guajillo chilies, stems and seeds removed, torn into pieces
3 dried New Mexico chilies (or pasilla), stems and seeds removed, torn into pieces
4 cups beef stock, divided
2 teaspoons kosher salt
1 teaspoon black pepper
2 teaspoons canola oil
3 cloves garlic, minced
1/2 cup diced onion
2 teaspoons ground cumin
1 teaspoon dried oregano
Small tortillas or prepared rice (optional)

3 bls (1.361 kg) ground beef (I used 85 / 15 fat to meat ratio)
1 medium to large onion finely chopped
5 cloves garlic minced
6 Tbsp (40 g) chili powder (I used McCormick Brand)
3 tsp (7 g) smoked paprika
3 tsp (8 g) garlic powder
3 tsp (8 g) onion powder
3 tsp (7 g) ground cumin
3 Tbsp (49.5 g) tomato paste
7 cups (1.65 L) low sodium beef broth
1 chipotle pepper in Adobo sauce
2 Tbsp Adobo sauce from can of chipotle peppers
2 - 15 oz cans pinto beans (drained and rinsed)
salt and pepper to taste
*For corn starch slurry*
4 Tbsp (35 g) corn starch
4 Tbsp (60 ml) cold water
INSTRUCTIONS
- In a preheated on a medium high heat 6 .5 qt pot add 3 tbsp oil and ground beef
- Add salt and pepper to taste, cook ground beef for 5 to 8 minutes
-Now add garlic and onion, combine and continue to cook for 3 to 5 minutes
- Next add and combine all dry seasonings and spices to cooked ground beef
- Now add tomato paste, combine and cook for a minute or two
- Next add beef broth, stir and mix well
- Add chopped chipotle pepper, adobo sauce and bring to a boil
- Cover pot with a lid, lower the heat and gently simmer for 1 hour stirring through out
- After and hour add cornstarch slurry to thicken chili
- Add drained and rinsed pinto beans combine and simmer for and additional 15 minutes then serve
