How To make Tomato & Dill Soup
2 Onions, minced
2 Cloves garlic, chopped
1 ts Olive oil
4 c Chopped plum tomatoes
1 c Diced sweet red peppers
1/4 c Diced celery
2 tb Chopped green chilies
2 c Stock
2 ts Fresh dill, chopped
2 tb Chopped fresh cilantro
1/2 ts Cayenne
1/4 ts Cumin
Combine all ingredients except dill, cilantro, cumin, cayenne & salt. Bring to a boil & simmer for 25 minutes. Let cool slightly, then puree. Stir in remaining ingredients with some salt & pepper. Serve warmed or chilled. Nava Atlas, "Vegetariana"

R36: Dill soup / Rasam :
This soup is very versatile, which can be eaten like a soup or eaten with rice as Rasam. Fresh Dill is very low in calories, yet surprisingly good source of vitamins and minerals.
Dill is a good source of:
* Vitamin A, Vitamin C, Calcium, Iron.
* Improve Vision
* Antioxidant
* Improve bone health.
* Wound healing.
Ingredients :
* 1/2 tsp cumin seeds
* 1 tsp coriander seeds
* 1/2 tsp black pepper
* 1/2 cup finely chopped dill leaves.
* 2 green chillies
* 1/4 cup grated coconut.
* 1 1/2 tsp cooking oil
* 1/4 tsp mustard seeds
* 1/4 tsp asafetida (optional)
* 1 dry red chilly
* Small sized tamarind( may be 1 tsp tamarind paste)/ 1 tsp lemon juice
* 1/2 tsp jaggery / brown sugar
* Salt to taste
* Water as required ( 1 cup )
Method:
* Dry roast cumin seeds, coriander seeds and black pepper till you get a nice aroma.
* To a pan add 1/2 tsp oil fry green chilles. Once done remove it.
* To the same pan add chopped dill leaves, let it cook for few minutes.
* Take all the above ingredients in a blender add coconut to it. Grind to a paste.
* Take this paste in a pan , add 1 cup of water or as required.
* Add tamarind paste ,jaggery and salt. Bring it to boil.
* Take left over oil in a small pan, add mustard,asafetida and red dry chili. Let it splatter. Pour the seasoning to the rasam / soup. Enjoy.
Note:
* Seasoning is optional, you can omit it if you want to drink like a soup.
