Pasta with Peas and Pancetta | Easy and Delicious!
Rigatoni Pasta (shells work well too) with pancetta and peas is a simple pasta that's so good! Flavored with pancetta fat, the peas, onions, and garlic coat the rigatoni in a simple sauce of emulsified pasta water. This is a comforting pasta to add to your go-to list!

INGREDIENTS:
- 1 pound medium shell pasta or Rigatoni
- 1 pound frozen peas
- 6 ounces pancetta - cubed
- 1 medium onion - diced
- 5 cloves garlic - sliced
- 2 Tablespoons olive oil
- 1/4 cup parsley - minced
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper

Pasta and Peas an old classic Italian recipe. A creamy, and cheesy pasta dish from scratch.
Recipe Steps:
First I stir-fry white onions in extra virgin olive oil and then add green peas.
A pinch of salt, a scraNCH of pepper and some hot water. Remove most of your peas, blend and Strain the cream into your pan. Keep adding more hot cooking water And take it to a boil then add your uncooked pasta.
It will slowly absorb all the sauce. Just keep adding a little water until the pasta is al dente. I can't stress enough, if its getting too thick, add more boiling cooking water.
Finally, I’m going to whisk one egg, some pecorino and parmigiano and mix it in for the last minute of cooking.

triple cheese tortellini pack 1 (9Oz)
butter 2 tbsp
flour 2 tbsp
garlic grated 2 cloves
chicken broth 1 1/2 cups
lemon juice 1 1/2 tbsp
heavy whipping cream 3/4 cup
baby spinach handful
seasoning ;
salt 1 tsp
pepper 1/3 tsp
cayenne 1/4 tsp

Mac 'n' Cheese with Peas!
This pesto is great with other green veggies, you can try it with a mix of frozen broad beans and peas, or swap in half for raw broccoli florets.
Serves 4

Cook 30 minutes
Vegetarian
350g (12oz) macaroni
200g (7oz) frozen peas, defrosted 1 garlic clove
50g (2oz) basil leaves
15g (½oz) mint leaves
30g (1oz) toasted pine nuts
3 tbsp extra virgin olive oil
100g (3½oz) mascarpone
50g (2oz) Parmesan cheese (or vegetarian alternative), grated, plus extra to scatter
25g (1oz) unsalted butter
25g (1oz) plain (all purpose) flour 400ml (1¾ cups) vegetable stock 75g (3oz) mozzarella, grated
1. Preheat the oven to 200°C/180°C fan/4oc°F/Gas 6. Cook the
pasta in boiling salted water for 10 minutes until not quite cooked. Drain and set aside.
2. Meanwhile, in a small food processor, blitz the peas with the garlic, basil, mint, pine nuts and the extra virgin olive oil. Whizz in the mascarpone and the Parmesan.
3. Melt the butter in a pan, add the flour and cook for 2 minutes,
then gradually add the vegetable stock until you have a smooth, thick sauce. Add the pesto and stir until smooth. Season to taste.
4. Stir the sauce through the pasta and tip into an ovenproof dish. Scatter with the rest of the parmesan and the grated mozzarella and bake for 20-25 minutes until bubbling and golden.
