How To make Triple Cheese Pasta with Green Peas
4 oz Gorgonzola cheese; room
-temperature 3 T Unsalted butter; softened
5 oz Mozzarella; cut into 1/2-in
-cubes 5 oz Italian fontina cheese; cut
-into 1/2-in cubes 1 T Olive oil
1/4 ts Freshly ground pepper
1 pk Frozen baby peas (10 oz) or
2 c Fresh peas
3/4 lb Rotelle pasta
In a small bowl, mash the Gorgonzola and butter. In a medium bowl, combine the mozzarella, Fontina, olive oil, and pepper. Using a steamer rack, steam the peas over moderate heat until tender, until 5-7 minutes. Alternatively the peas can be cooked in the microwave about 3-4 minutes or until done. In a large pot of boiling salted water, cook rotelle until tender but still firm to the bite 5-7 minutes, drain well. Meanwhile, place the Gorgonzola and butter mixture in a large warmed bowl and let melt. Add the pasta and peas to the bowl. Toss to coat well. Sprinkle with the chives, add the mozzarella and Fontina mixture and toss again. Season with salt and additional pepper to taste. SOURCE: The Best of Food and Wine, 1993 Collection Cookbook. Pasta And Peas - Alla Fedele Recipe #3
1/2 Cup of Olive Oil
1 Medium Onion minced
2 Cups of frozen Peas (1 cup per person)
1/2 Cup of fresh Parsley chopped
1/2 teaspoon of Salt
1/2 teaspoon of Ground Pepper
1/2 lb of pasta (Ditalini)
Serves 2 people
Sauté minced onion with olive oil for 15 minutes. Then add frozen peas, parsley, salt & pepper. Cover onions and peas with water, about an inch above. Simmer for 15 minutes. Start boiling the pot of water for your pasta. Once water is boiling, add 1/4 Cup of salt and add in pasta. Cook pasta to the directions on the package. Once pasta is finished cooking, strain pasta, add to dish, add peas & onions, and grate Pecorino Romano cheese on top.

Pasta & Peas, Classic Italian Recipe - The Pasta Queen
Pasta and Peas an old classic Italian recipe. A creamy, and cheesy pasta dish from scratch.
Recipe Steps:
First I stir-fry white onions in extra virgin olive oil and then add green peas.
A pinch of salt, a scraNCH of pepper and some hot water. Remove most of your peas, blend and Strain the cream into your pan. Keep adding more hot cooking water And take it to a boil then add your uncooked pasta.
It will slowly absorb all the sauce. Just keep adding a little water until the pasta is al dente. I can't stress enough, if its getting too thick, add more boiling cooking water.
Finally, I’m going to whisk one egg, some pecorino and parmigiano and mix it in for the last minute of cooking.
