There's a saying in China which runs 'if you do not eat twice-cooked pork, then you have never been to Szechuan'. And it makes sense considering that is one of the most popular local recipes. The initial boiling makes the pork belly tender, while the subsequent frying makes it crispy outside and juicy inside. Our seasoning is just icing on the cake!
Preparation:
1. Place a 500g piece of pork belly into a pot filled with boiling water, and cook it until tender. Drain it and cut it into 2-3mm slices, then set aside.
2. Cut 250g of your favourite ingredients (onions, green peppers, ginger, dried beancurd, garlic, etc.), then set them aside.
3. In a wok add 80g of oil, then stir-fry the meat slices until they start shrinking in size and become wavy. Add the other ingredients and keep stirring until cooked. Finally, pour the seasoning bag (60g) on top and keep cooking and stirring until fragrant. Enjoy!

Recipe:
~ 1lbs pork butt sliced
1 head cabbage
1/2 green bell pepper
1 onion
1 jalapeno
3 tablespoons hoisin sauce
2 spoons chili oil
Cut veggies into bite size pieces. Slice pork thinly, season with garlic salt and pepper. Cook veggies (minus the cabbage) in some olive oil. Set aside. Cook pork in a little olive oil until almost cooked, set aside (it will keep cooking and there's one more cooking step). Cook cabbage covered, turning every minute or so and re-covering pan. COok about 5 min. Add sauces and pre-cooked veggies and pork back in. Mix well. Enjoy.

The dish's ingredients include pork, which is simmered, sliced, and stir-fried; commonly stir-fried vegetables such as cabbage, bell peppers, onions, or scallions; and a sauce that may include Shaoxing rice wine, hoisin sauce, soy sauce, sugar, ginger, chili bean paste, and tianmianjiang bean paste.

Spicy Twice-Cooked Pork with Cabbage 回鍋肉 (Healthy No Deep-Fry Version!)
This is one my favorite dish to order when I dine outside because it is savory and spicy - and I love fatty meat (consumed at a moderation and occasionally). However, most restaurants make this dish by deep frying in hot oil to give it the twice-cooked effect. I opted out on deep frying and pan fried the bacon! 我通常出街食飯都好喜歡點這碟餸,因為又辣又入味.但是好多時外面的餐廳都會炸過然後再返煮,覺得不太健康.我選擇煎香煙肉,都會有同一個的效果.

Ingredients & Price:
• 1 pound of bacon - $4.00 (marinated with 0.5 tsp of salt, 1 tsp of sugar, 1 tbsp of soy sauce)
• 8 cubes of dried bean curds - $2.00
• Small amount of cabbage - $0.50
• 1/4 cup of preserved black beans
• 1 tbsp of fermented soy bean paste
• 4 cloves of chopped garlic
• Serrano pepper
• 2 tbsp of roughly chopped ginger
• 1 tbsp of rice cooking wine
• 2 stalk of chopped green onion
• Optional: cilantro
*Note: always feel free to adjust the seasoning based on your own preference!

Twice Cooked Pork, Sichuan Huiguorou Recipe (回锅肉)
Twice cooked pork! This is a classic Sichuan dish that's gotten popular throughout China. This week we're doing this the authentic Sichuan way, which actually isn't very spicy.
Many people seem to use pork belly for this dish, which totally works... but the best cut for this is actually the middle portion of the ham of the pig. Skin on is best either way!
