Ingredients:
2 medium Uncooked potatoes, about 10 oz
2 Tbsp Brummel & Brown Spread Made with Yogurt
1 medium Uncooked sweet onion
2 Tbsp All-purpose flour
4 cups Fat free chicken broth
2 cups Water
5 Tbsp Cornstarch
1 1⁄2 cup Instant mashed potatoes
2⁄3 cup Kroger Reduced fat sharp cheddar finely shredded cheese, divided
1 1⁄2 cup Fat Free Half & Half
Black pepper to taste
1⁄2 tsp Dried basil
1⁄8 tsp Dried thyme
4 slices bacon, cooked
1⁄4 cup green onions, chopped
Melt the butter spread in a large pan, on medium heat. Add the diced onions and saute until translucent. Add garlic and cook another minute. Add the flour to the onions, stirring to incorporate them, cook for about a minute. Dissolve the cornstarch in the cold water. Add the broth, dissolved cornstarch water, instant mashed potato flakes, and seasonings and stir. On medium-high heat, bring the mixture to a boil, stirring often. Reduce heat and simmer for 5 minutes. Cut the baked potatoes in half lengthwise, and cut in their skins, to make small bite-sized pieces. Scoop out the potatoes and add them, 1/3 cup cheese and half & half to the soup, stirring to combine all the ingredients. Bring it back to a boil, then reduce heat and simmer the soup for another 12-15 minutes, stirring every couple of minutes. Top each serving with about 1 1/2 tsp remaining cheese, bacon and green onions.

Such a yummy egg drop soup recipe I wanted to share with you that I made the other day! This is an original ww recipe that I saw Chloe from @average.fitinfluencer make!
Zero point egg drop soup: 1 1/2 cup is 0sp
What you will need:
- olive oil spray
- 4 cups chicken broth
- 6 eggs
- 1 tbsp low sodium soy sauce
- 1 tsp chili garlic paste
- 1 tbsp minced garlic
- 1 container of shiitake mushrooms
- 3 stalks green onions
- 1 tsp corn starch
- 1 tbsp water
How to make:
- cut your green onions and mushrooms in thin slices. to a pot spray with olive oil spray and add 1 tbsp minced garlic, 1 tbsp soy sauce, next add in mushrooms and green onion sautée until mushrooms are softened.
- Once mushrooms are soft add in 4 cups of chicken broth, 1 tsp chili garlic paste, and stir together, place heat in medium and let simmer for about 12 minutes.
- in a bowl add 1 tsp corn starch with 1 tbsp water and mix together, then add into soup, stir together and turn heat down to low.
- whisk 6 eggs together then add 1/4 cup of the broth directly into the eggs. With a fork slowly pour in the eggs and stir with fork slowly while pouring in the eggs.
Serve with extra soy sauce , chili garlic paste, and top with green onions.
