White Chocolate Cheesecake
In this recipe, the white chocolate helps reduced the need for other ingredients. The sweetness from the chocolate and combination of this with the cream cheese and all purpose cream with around 25% of fat helps elevate this simple treat into a creamy delicious worth it dessert!
This recipe is a quick no back dessert you can make anytime of the week!
White Chocolate Cheesecake (using 5 ingredients) Recipe:

Ingredients:
10 – 12 pcs. Graham crackers
1/3 cup unsalted butter (melted)
1 tablespoon unsalted butter
1 cup white chocolate chunks
1 cup cream cheese
2 cups all purpose cream
½ cup white chocolate (shredded)
Directions:
For the crust; in a blender or grinder, add the graham crackers and grind. Once this looks like sand, add 1/3 cup of melted butter and grind again. Set aside.
In a pan, place a parchment paper at the bottom, or make a makeshift cross using two long strips of parchment paper. Then place the bottom parchment. These can help lift out the cake later.
Place the crust mixture in the pan and press this down. Keep this in the fridge to chill while making the filling.
For the filling; melt white chocolate and 1 tablespoon of unsalted butter in the microwave for 15 to 30 seconds. Mix this till it looks smooth.
In another bowl, whisk the cream cheese till fluffy, add all purpose cream 1 cup at a time, and melted white chocolate and whisk well. Add this over the graham crust. And chill for 3 hours to overnight. Keep 1 – 2 cups of filling in a piping bag with a star tip.
Once chilled, pull the ‘cross’ corners to lift the cake up. Or place a plate over the pan and flip and tap the bottom of the pan. Take the pan and parchment paper off. Use another plate and flip this back again. So the graham crust is at the bottom. Use a spatula to smoothen the edges.
Use the pipe to decorate all over the top of the cheesecake, chill if the topping turns too soft. Top with white chocolate shreds before serving.

Ingredients:
Prepare Crust:
-Digestive biscuits 220g
-Bareek cheeni (Caster sugar) 2 tbs
-Makhan (Butter) salted & melted 5 tbs
Prepare Cheese cake:
-Candyland White Chocolate 200g
-Cream 200ml (room temperature)
-Cream cheese 700g (room temperature)
-Bareek cheeni (Caster sugar) ½ Cup
-Maida (All-purpose flour) 3 & ½ tbs
-Vanilla essence 2 tsp
-Dahi (Yogurt) whisked ¼ Cup (room temperature)
-Anday (Eggs) 3 (room temperature)
-Anday ki zardi (Egg yolk) 1 (room temperature)
-Water hot as required
Prepare Cream Frosting:
-Cream chilled 200ml
-Vanilla essence ½ tsp
-Icing sugar 100g
-Candyland dark chocolate 125g
Directions:
Prepare Crust:
-In a chopper,add digestive biscuits & chop well.
-Add caster sugar,melted butter & chop until crumbled & set aside.
-Use the flat side of the 10”inch spring form baking pan,grease with butter & lined with butter paper.
-Add crust mixture and press firmly down into the base to create an even layer (thickness should be 1 cm) and chill in the refrigerator for 1 hour to set firmly.
Prepare Cheese cake:
-Coarsely chop white chocolate and add in a bowl.
-Add cream & microwave for 2 minutes then mix until well combined & set aside.
-In a bowl,add cream cheese & beat well (approx. 2-3 minutes).
-Add caster sugar & beat well.
-Now add melted white chocolate & cream mixture & beat well for 1-2 minutes.
-Add all-purpose flour,vanilla essence,yogurt & beat again.
-Add eggs,one by one & beat after each addition.
-Add egg yolk,beat again & set aside (Don’t over beat the mixture after adding eggs).
-For water bath,on large baking tary,place oven proof dish and place baking pan.
-Now pour prepared cheese cake batter in baking pan and filled large baking tray with hot water.
-Bake in preheated oven at 170 C for 55-60 minutes (on lower grill) and check the cake by tapping the pan with wooden spoon,if wobbling continues than bake for few more minutes. Let the baking pan rest in oven for 1 hour.
-Take out from the oven & refrigerate for 8 hours.
Prepare Cream Frosting:
-In a bowl,add cream & beat well.
-Add vanilla essence,gradually add icing sugar & beat until soft peaks form & refrigerate until use.
-Use a knife to loosen the chilled cheese cake from the rim of the spring form pan.
-Add prepared cream frosting on cheesecake & use an offset spatula to smooth down the top then remove the rim.
-Coarsely chop dark chocolate,add in a bowl and microwave for 40-60 seconds (medium powder) and mix well then transfer melted chocolate to piping bag.
-Add melted chocolate in silicon mold and freezer for 5 minutes.
-Decorate cheesecake with melted dark chocolate & chocolate buttons then cut into desired slices & serve!
Tips:
-All ingredients must be at room temperature (except for frosting).
-Don’t over beat the batter after adding eggs.
-Baking should be on lower grill.
-To check cheese cake baking,tab baking pan with wooden spoon,if wobbling continues then bake for few more minutes.
-After baking,one hour resting of cake is must in oven.
-Before decoration,cake should be refrigerated for at least 8 hours.

**I realize I said in the video to bake at 250*F for one hour and 20 minutes AND 120 minutes. The correct time is one hour and 20 minutes. Sorry for the confusion.**
What you'll need:
2 lbs cream cheese, softened
2/3 cup sugar
4 large eggs
2 egg yolks
2 Tbsp all-purpose flour
1-1/2 tsp vanilla extract
8 oz white chocolate, melted and slightly cooled
3/4 cup raspberry pie filling, preserves or doughnut filling
3 cups chocolate cookie crumbs
10 Tbsp butter, melted
Start off with the crust by chopping the cookies in a food processor until they are fine crumbs. Add in melted butter and mix thoroughly. Put into a 9 springform pan and press up the sides about 2/3rd's of the way up and on the bottom. Set aside.
Melt the white chocolate in a bowl in the microwave for about a minute, stirring every 30 seconds until melted and smooth. Set aside.
For the batter, in a stand mixer or in a large bowl with an electric hand mixer, beat cream cheese for 2-3 minutes or until nice and smooth. Scrape down the beater and bowl and mix again until no lumps remain. Add in sugar and beat until incorporated. Scrap down beater and bowl and mix again. Add in the eggs, one at a time, just until incorporated. Do NOT over mix! After adding the first 2 eggs and yolk, again scrape down beater and bowl. When eggs are incorporated add in flour, vanilla and white chocolate. Mix just until incorporated. Again, scrape beater and bowl and give it one last mix to make sure everything is mixed well. Pour into prepared crust.
Preheat oven to 350*F and bring a pot of water to a boil on the stove top. Microwave the raspberry filling or preserves for about 30 seconds just until warm. Drop by spoonfuls onto the batter and using a knife, swirl into the batter. Use an up and down motion to get a nice swirl all the way to the bottom of the batter. Put springform pan into a 10 cake pan and then into a roaster in the preheated oven. (Thanks to America's Test Kitchen for this tip to avoid a leaky water bath). Add boiling water to the roaster being careful not to splash it into your cheesecake. Add enough to come up 2/3rd's of the way up the sides of the cake pan. Bake for 20 minutes and reduce oven temp to 250*F and bake another hour and 20 minutes. ***DO NOT OPEN THE OVEN DOOR!!*** After 80 minutes is up, turn oven off and let the cheesecake cool in the oven for 3 hours or until room temp. ***AGAIN, DO NOT OPEN OVEN DOOR!!*** Remove the cheesecake from the cake pan and refrigerate overnight. The next day, remove spring form pan and cut into slices. Serves 12-18. Enjoy!!

No-Bake White Chocolate Raspberry Cheesecake Recipe
This No-Bake White Chocolate Raspberry Cheesecake is one of the best no-bake cheesecakes ever and it’s very easy to prepare. The raspberry heart shapes on top makes it ideal for Valentine’s Day but is perfect for any other occasion as well.

Ingredients
Makes about 10 servings
Crust
7 oz (200g) oreo cookies
4 tbsp (60g) butter, melted
Raspberry Coulis
1 1/2 cups (150g) raspberries, fresh or frozen
1/4 cup (50g) sugar
1 tbsp (15ml) lemon juice
1 tsp (2g) cornstarch
Cream Cheese Filling
7 oz (200g) white chocolate, small pieces
4 tbsp (60g) whipping cream
1 pound (500g) cream cheese, room temperature
1/4 cup (30g) powdered sugar
Lemon zest of a lemon
2 tsp (10g) vanilla extract
1 cup (240g) whipping cream (35% fat), chilled
1. Prepare the raspberry coulis. In a small saucepan, whisk together suga,cornstarch and lemon juice. Add raspberries and bring to a boil over medium-low heat, stirring constantly. Simmer for 5 minutes and remove from heat. Sieve the sauce to remove seeds and set aside to cool down until ready to use.
2. Prepare the crust. Place the oreo cookies into the bowl of a food processor and crush until crumbs form. Add melted butter and process until evenly moistened.
3. Press the mixture into the bottom of a greased 8 inch (20 cm) springform pan using the back of a spoon. Refrigerate until the filling is prepared.
4. Prepare the filling. Place white chocolate and the 4 tbsp of cream into a heatproof bowl and place over a pan with simmering water. Melt over low heat.
5. In a large bowl mix cream cheese until smooth. Add powdered sugar, lemon zest and vanilla extract and mix to combine. Mix in melted chocolate and set aside.
6. In another bowl mix whipping cream until stiff peaks form. Gently fold the whipped cream into the white chocolate and cream cheese mixture.
7. Pour the filling over the prepared crust, use an offset spatula to spread it evenly.
8. Place the raspberry coulis into a piping bag fitted with a plain small tip and pipe small circles in a swirl pattern on the top of the cheesecake.
9. Use a toothpick and run it into the center of each circle to create heart shapes.
10. Cover and refrigerate the cheesecake for at least 4 hours or better overnight.
11. Serve with more raspberry coulis alongside. Enjoy!
