Today, I'm going to introduce you to buckwheat. Buckwheat is a staple in Ukraine, celebrated for its unique taste. It's not only delicious but also low FODMAP and naturally gluten-free. Additionally, it's a rare plant-based source of nine essential amino acids.
Ingredients:
3 tbsp brown buckwheat (about 50g)
Water
Salt
2 eggs
Olive oil
Your choice of veggies for a salad
Instructions:
Prepare the Buckwheat: Start by washing the buckwheat thoroughly. Place it in a pot and add enough water to cover it.
Boil Buckwheat: Bring the pot to a boil and cook the buckwheat for about 15 minutes until it's tender.
Fry Buckwheat: Preheat a pan and add a splash of olive oil. Transfer the cooked buckwheat to the pan.
Crack Eggs: As the buckwheat starts to get crispy, crack two eggs into the pan.
Fry Until Ready: Continue cooking until the eggs are cooked to your liking, and the buckwheat becomes crispy. You'll notice the buckwheat taking on a popcorn-like flavour.
Add Veggies: Serve your delightful buckwheat and eggs with your favourite veggies for a refreshing salad.

???? Directions:
1 cup buckwheat groats (or more/less depending on how much you need)
3-4 cups water for soaking
Optional: add 1 Tablespoon lemon juice or apple cider vinegar to your soaking water
Rinse the buckwheat thoroughly before soaking. Let the buckwheat soak 8-12 hours. Rinse again and wash away the soaking water. Top with your favorite toppings, and eat with plant milk (like cold cereal). Enjoy!
