Slow Cooker Chilli Con Carne | Good Housekeeping UK
This Mexican-style chilli con carne recipe is perfect for feeding large groups. It takes around 25 minutes in a pan, then another 5 hours in a slow cooker.

Directions
Heat 1tbsp of the oil in a large pan and fry the beef for 10min or until well browned, stirring to break up any lumps. Remove from the pan with a slotted spoon and transfer to the slow cooker (don't turn the cooker on at this point).
Add the remaining oil to the pan, then gently fry the onion for 10min, or until softened.
Add the spices and fry for 1min, then add the tomato purée, hot stock and the tomatoes. Bring to the boil, then carefully stir the mixture into the mince in the slow cooker. Cover and cook on Low for 4-5hr.
Stir in the chocolate, kidney beans and coriander and season with salt and ground black pepper, then turn off the cooker and leave to stand for 10min.
Serve with guacamole, salsa, soured cream, grated cheese, tortilla chips and pickled chillies.

INGREDIENTS
- 1 lb ground beef, cooked
- 1 cup chopped onion
- 1 1/2 cups chopped peppers (sweet or spicy)
- 1 15-oz can kidney beans
- 1 15-oz can pinto beans (half whole and half mashed)
- 2 tbsp molasses
- 2 tbsp chili powder
- 1 tsp cumin
- 1 1/2 tsp smoked paprika
- 1 1/2 tsp salt
- 3 bay leaves
- 8 cups tomato pureé
INSTRUCTIONS
In a 4-quart slow cooker, combine the cooked ground beef, onion, peppers, kidney beans, pinto beans (both the whole and mashed portions), molasses, chili powder, cumin, smoked paprika, salt, bay leaves, and tomato pureé. Stir to combine and turn the slow cooker on high for 6-8 hours.
Once the chili is cooked and slightly thickened, remove the bay leaves, and flavor with any additional salt as needed. Serve immediately or keep warm until ready to serve.

Hope ya'll enjoy! The ingredients list is kinda long, but once you get all of your ingredients together everything else is a piece of cake! From time to time I like to experiment with different flavors to see what I can come up with. This is one of my many ways to make chili. It's so GOOD! Feel free to take out any ingredient that you don't like, this recipe is very forgiving.This chili taste BEST when served immediately after cooking.
*THIS IS A SLOW COOKER RECIPE*
Chili Recipe
Here's what I used in the video:
Power Quick Pot ( I'm using a 10 Qt)
1 Green bell pepper
3 Celery stalks
1 Yellow onion
5 Garlic cloves
2 lbs. of Ground beef (I used 80/20 lean)
2 Tsp Oregano
2 Tsp Brown sugar
2 Tsp Coriander
4 Tbsp Chili powder
3 Tbsp Ground Cumin
2 Tsp Dried Thyme
1 Tsp Smoked paprika
1/2 Tsp Dried Basil leaves
1/2 Tsp Black pepper
1/4 tsp Cayenne Pepper (to taste, gradually add more as needed)
Salt to taste ( I used 1 1/2 tsp)
1 Bay Leaf
4 Tbsp Green onions
2 16 oz Cans Kidney beans (rinsed and drained)
1/2 cup canned Black beans
1- 28 oz Can Hunts Diced tomatoes (with juices)
1- 29 oz Can Hunts Tomato sauce
1- 14.5 oz Can Swanson Chicken broth (low sodium)
2 Tsp Worcestershire sauce
*TIP - Taste as you go!!

* 1 - 15oz. can black beans, drained & rinsed
* 2 - 15oz. cans dark red kidney beans, drained & rinsed
* 3 garlic cloves, minced
* 1 large onion, diced
* 2lbs. lean ground beef, (90/10 or 93/7)
* 2 tsp cumin powder
* 1.5 tbsp chili powder
* 1 tsp dried oregano
* 1.5 tsp salt
* .5 tsp black pepper
* 1 tsp garlic powder
* 1 tbsp sugar
* 2 - 15oz. cans of diced tomato
* 2 - 15oz. tomato sauce
* 1 - 10oz. diced tomatoes & green chilis

1. Drain, & rinse both black beans & kidney beans - set aside
2. Mince garlic & dice onion - set aside
3. Cook lean ground beef on medium-high heat for 5-10min. - breaking it up & cooking evenly
4. Add onion, garlic, & seasonings
5. Cook for 5min.
6. Transfer mixture to your slow cooker, & add canned tomatoes, tomato sauce, & tomatoes w/ green chili
7. Mix all ingredients together in the slow cooker & secure the lid
8. Cook on high for 3-4hrs.
9. Stir, & serve however you like best

This chili does require quite a few different ingredients but is well worth it. Most of the ingredients are on the cheaper end so it shouldn’t be too hard finding everything for a reasonable price.

• 500g (17 ½ Oz) Beef Mince
• 1 Brown Onion, diced
• 2 Tsp. Crushed Garlic
• 1 Red Pepper, diced
• 2 Tbsp. Tomato paste
• 1x 400g/14 Oz Can Red Kidney Beans
• 2x 400g/14 Oz Cans diced Tomatoes
• 1 Tbsp. sugar
• 1 tsp. Ground Cumin
• 1 tsp. paprika
• 2 tsp. Chili (Flakes, Fresh or powder)
• Salt & Pepper
There are just so many things that go amazing with a good chili con carne. For example, one of my favorites is to top it with some cheese and sour cream. Also dipping some fresh bread into the chili is amazing as well.
Make sure you don’t throw any of the leftovers out as this reheats really well. You can just reheat as is or you can be a little creative and make something like chili cheese fries, nachos and tons more.
In the video I fry the beef, onion and garlic off before adding it to the slow cooker. You can actually skip this step if you’re running low on time. There will be a little difference in texture and flavor but nothing too radical.
The sugar is important as it will help remove the bitterness that tomatoes often has. You shouldn’t need any more than the recommended amount.
