A short history of how my mother's down-home banana bread recipe came to be made and sold at Munich's toniest confectioner, Elly Seidl Pralinen, and a review of their Hawaii-inspired creation.
Cinnamon Raisin Spelt Bread: how to make cafe style bread at home
My new cinnamon raisin spelt bread is a perfect bread toasted for breakfast. A blend of wholegrain spelt flour and white spelt flour, with cinnamon, cardamom and added raisins and walnuts. An update from a previous recipe this time there's no milk, no sugar and a little added cardamom spice and the option of adding gently toasted walnuts. In this recipe, you will be baking cafe-style cinnamon raisin bread at home.
Cinnamon Raisin bread is even better toasted with butter and a little jam for a weekend breakfast treat. Also, suitable to slice and freeze for later on.
Takes = 15 prep. resting time, 1.5 to 2 hours, plus 45 mins to cool
Bakes = 30-40 mins
Makes = 10-12 slices
Tin = small 2 lb (1 lb) loaf tin

10:17 once bake add optional syrup glaze to the top and a sprinkle of cinnamon
11:22 rest before slicing, taste test and outro

Ingredients
* White Spelt flour – 350g, 12 oz (2.5 cups)
* Wholegrain Spelt flour – 150g, 5.3 oz (1 cup)
* Salt – 1 teaspoon
* Ground cinnamon – 3 teaspoon
* Ground cardamom (optional) – 1 teaspoon
* Yeast – fresh 21g, 70.25 oz dried yeast 7g, 0.74 oz(2 teaspoons)
* Warm water – 300ml (1 cup +1/4) 10 fl oz
* Olive oil – 2 tablespoon
* Raisins – 100g, 4.2 oz (2/3 cup)
* Walnuts, chopped (optional) – 100g, 3.5 oz (1 cup)

GF BANANA BREAD:
-3 cups gf flour
-1 cup warm almond milk
-3 bananas (or sub for 1 1/2 cups sweet potatoes or pumpkin puree)
-1/2 cup applesauce
-1 tsp baking soda
-1 tsp baking powder
-1 tbl vanilla
-pinch of salt
-1/2 cup vegan chocolate chips
^^want a sweet bread?! Add 1/2 cup coconut sugar or maple syrup
*Pour dough into a parchment lined loaf pan, bake at 350 for 50-60 minutes or until your knife check comes out clean
*Add 4 tbl of melted vegan butter to make this recipe even better!
GF IRISH SODA BREAD
-3 1/2 cups GF flour
-1 tsp baking soda
-1/4 tsp salt
-1 3/4 cup warm almond milk
*Mix all ingredients together. Bake sheet pant lined with parchment paper sprinkled with flour. Bake at 450 for 15-17 minutes, turn heat to 400 and bake for an additional 25-27 minutes
^^Cool 15 minutes before cutting and serving
**Add 4 tbl of melted vegan butter to make this recipe even better!
GF BLUEBERRY DONUTS
-2 1/2 cups GF flour
-10 oz blueberries
-1 banana
-1 tsp baking soda
-1 tsp baking powder
-sprinkle of salt
-1 tbl vanilla
-1 cup warm almond milk
*Mix all ingredients than scoop into silicone donut baking molds. Makes 18 donuts
Bake at 350 degrees for 30-35 minutes. Knife check to make sure donuts come out clean so they are fully cooked
Let donuts fully cook before removing from molds as the donuts are very soft and need to completely cool so they don’t fall apart
^^Add 1/2 cup cane sugar to make your donuts sweeter

2 Egg yolks
4 tbs. Butter

4 large Bananas, sliced
1 container Whipped Topping or homemade
1 large box Vanilla Wafers(reserve 1/2 cup crushed wafers for topping)

Recipe:
One stick of room temperature butter, 1 1/2 cups of all purpose flour, 1 teaspoon of baking soda, 1 teaspoon of baking powder, 1 teaspoon of salt, three very ripe bananas mashed, one cup of sugar two large eggs, 1/2 cup sour cream, 1 teaspoon of vanilla extract, 3/4 of a cup of chopped pecans or walnuts.
Preheat oven to 350° and grease and flour a loaf pan. In a large bowl whisk together the flour, baking soda, baking powder and salt. In a separate large bowl mix together the 1/2 cup of butter and sugar until light and fluffy. Add the eggs one at a time mixing in between each egg. Stir in mashed bananas, sour cream and vanilla and beat until just combined. Add the dry ingredients in three batches. Stir in your chopped nuts. Pour batter into your loaf pan and bake for one hour and 10 minutes or until a toothpick inserted in the center comes out clean
