bananas, ripe, well mashed (2 or 3)
1/2

walnut meats (optional)
Directions:
Leftovers keep well in the refrigerator and can be sliced and toasted before serving again. Banana Bread also freezes well. Use overripe banana.
Sift the flour, baking powder, baking soda, and salt together. With the electric beater on low, fluff the shortening until soft and creamy in a small bowl. Or beat by hand until fluffy. Add the sugar gradually. Beat in the eggs and dark corn syrup in a slow stream. With a fork, beat into the shortening a third of the bananas, half the flour, another third of the bananas, the remaining flour, and the last of the bananas. Fold in the walnut meats. Turn into a greased and floured 1 1/2-quart mold and cover with a loosely fitting plate. Place the mold on a rack or a trivet in the cooker. Cover the cooker, but prop the lid open a fraction with a toothpick or a twist of foil to let excess steam escape. Cook on High for 2 to 3 hours, or until the bread is done. Cool on a rack for 10 minutes, then turn the bread out of the mold. Dust over with brown sugar and serve warm.

SLOW COOKER BANANA NUT CAKE

RECIPE:
INGREDIENTS:15.25 oz. yellow cake mix (I use Pillsbury)
1/2 cup salted butter, melted
2 bananas, mashed (this is about 1 cup measured)
3/4 cup water
1 tsp. vanilla extract
3 large eggs
1/2 cup chopped walnuts, divided
For the frosting
8 oz. cream cheese (room temperature)
1/2 cup salted butter (1 stick) (room temperature)
1 cup powdered sugar
1 tsp. vanilla
1 Tbsp. milk
SLOW COOKER SIZE:
6-quart or larger
INSTRUCTIONS:
In a large bowl add the cake mix, melted butter, mashed bananas, water, vanilla extract, and eggs. Whisk until combined, do not worry if there is a few lumps left of cake mix, that is normal. Add about 3/4 of the nuts and stir again. (Saving some nuts for topping the frosting)
Spray the slow cooker very well with non-stick spray. Add the batter to the slow cooker and smooth out to a flat layer.
Cover and cook on HIGH for 2.5 hours, do not open the lid during the cooking time.
When the cooking time is done. Remove the insert out of the heating unit. Set the ceramic on a cooling rack. Let cake cool completely, this may take a few hours. To speed up the process after the ceramic isn't piping hot, you can put it in the fridge to cool.
When the cake is cooled, start making the frosting. You can use a stand mixer, or a handheld electric mixer.
Blend together the cream cheese and butter until combined. Add the powdered sugar, vanilla and milk. Blend until smooth, scrape down the sides of the bowl and blend again.
Spread the frosting on the cooled cake. Sprinkle with reserved nuts. Slice and serve.PRINTABLE RECIPE AND NUTRITIONAL INFO: will add link soon

3 medium bananas, mashed

Directions:
1. Coat the bowl of a 4-quart slow cooker with cooking spray.
2. In a large bowl, combine the eggs, butter, both sugars, and vanilla until they are well-combined.
3. Add the flour, baking powder, baking soda, and salt, and mix well, until the batter is smooth.
4. Fold in the mashed bananas and chopped walnuts. Stir until they are just combined.
5. Pour the mixture into the slow cooker and cover the top with a few paper towels. Place the lid on top of the towels and close tightly.
6. Cook on high for 4 hours until a toothpick inserted in the center comes out clean.
7. Once the slow cooker has cooled to the touch, run a butter knife around the edges to loosen the bread. Turn the bowl upside down on a platter to remove the bread.
8. Allow the bread to cool completely before slicing.
