Martha Stewart’s Multigrain Bread | Martha Bakes Recipes | Martha Stewart
Martha Stewart shares the recipe and bread-making technique for her classic multigrain bread. In this video, Martha takes us through how to make a dough starter with active dry yeast, whole wheat flour, rye flour, soaked bulgar wheat, and cooked wheat berries. After waiting for the dough to rise, you’ll brush it with egg whites which work as an adhesive for the decorative grain topping (made of oats, flax, and sunflower seeds). Cool thoroughly before slicing, and you’ll have wonderful bread for sandwiches, toast for breakfast, or just a bread and butter snack!

7 Minute Crock Pot Bread
Prep Time: 7 mins
Cook Time: 1 hr 45 mins
Total Time: 1 hr 52 mins
Author: Rachael
Ingredients:
1 TBS active dry yeast or instant yeast
1 TBS honey
1 cup warm water
2 3/4 cup all-purpose white flour (we used 3 cups in the video)
1 TBS white sugar
1 tsp salt
2 Tbs olive oil
Other:
Parchment paper
3 paper towels
Instructions:
1) Mix together warm (not hot) water, yeast, and honey, and let sit for a minute for yeast to foam
2) Stir together flour, sugar, salt, and then mix with yeast mixture and olive oil
3) Stir together with a wooden spoon
4) Knead for 5 minutes, either by hand or with a stand mixer and hook attachment. Do not short cut this time. Check the dough, it should be elastic, and not stick to your hands too much, and should form a nice ball. If this does not happen, knead a little longer until it reaches this stage.
5) Line a crock pot with parchment and place ball of dough in center
6) Put paper towels over the top, and put the lid, very slightly ajar over that, this will help absorb some of the moisture so the top of your bread is not mushy and wet while the bottom is crispy and hard.
7) Cook on high for an hour and a half, or until bottom is browned (You can just lift it out with the parchment to check how brown the bottom is)
8) Remove from crock pot, put on a baking tray, and into a preheated oven set to broil on high. Broil 2-3 minutes or until you reach the desired golden brown.
Notes:
Allow yeast to activate and foam.
Dough consistency is important for getting the right crumb and rise. Be sure to knead for the appropriate time, and that the dough is elastic, so you can pull on it and it doesn't easily tear. But also not too sticky.
It should stick to your hands, but release cleanly.
Knead until you reach this stage.
