Lemon Butter Caper Kajiki!
FEATURED SEAFOOD: Pacific Blue Marlin (Kajiki).
FEATURED CHEF: Erwin Manzano.
Chef Erwin seasons his fish fillet with Olive Oil, Salt, and Pepper before he begins to pan sear it.
In his sauté pan he combines Butter, Shallots, White Wine, sliced Mushrooms, Capers, Fresh Dill Weed and Lemon Juice for the seared Kajiki.
The fresh Kajiki is then rested on a bed of cabbage and is topped off with his Butter sauce. His plate presentation includes sides of Green Salad, Potato Salad and White Rice.
Another Hawaiian Plate Lunch classic.

Episodes of the Let’s Go Fishing Show conclude with seafood culinary demonstrations by Hawaii's award-winning chefs, with many of their recipes for fishes on dishes elevated to white tablecloth status.
Togarashi Glazed King Salmon!
FEATURED SEAFOOD: New Zealand Salmon.
FEATURED CHEF: Fred DeAngelo.
This Sous Vide approach to preparing King Salmon begins with the fresh fillet sealed in a bag made for poaching. In this bag the fish has been marinated with Olive Oil, Ginger, Lemongrass and Cilantro.
While the fish poaches, Chef Fred creates a Beurre Blanc with Butter, White Wine, Fresh Thyme, Lemongrass, Lemon Juice and Heavy Cream.
This dish includes a vegetable bed made with Edamame, Corn Relish, Sea Asparagus and Bell Peppers. Okinawan Potatoes also make an appearance.
Plating begins with the vegetable medley under the King Salmon Fillet which has been dusted with Cane Sugar and Shichimi (Togarashi) Spice before being caramelized with the kitchen torch. Killer Recipe!
